I'm not sure why your barbecues aren't enjoyable, but it sounds like people like to come, eat, make a mess, and leave you to do all the work. Is that even close? Usually when folks want to barbecue its because they want tasty food and good times with familly and friends. If you are hosting the party yourself, then its important that you plan ahead of time and get as much done as you can before everyone descends. Here are some ideas:

1. Plan your guest list. The smaller the better in some ways, less expense and less cleanup.
2. Plan your menu. Have a "signature dish" such as your famous barbecued ribs, or chicken, or sausages and build around it. You don't have to plan on cooking a ton of stuff to make people happy. Plan on having several side dishes that you can make ahead of time and refrigerate until the day of, or ask some of your friends and family to potluck the event.
3. Place lined wastebaskets around the area so that throwing away a plate etc. is easy to do. Recycle cans and bottles and make sure you have a can for those things that is well marked.
4. Two weeks in advance, visit Costco or Sam's and purchase your paperplates, tableware, napkins and such. You can also pick up your supplies such as meat, potatoes, and such to freeze until you need them. I keep a supply of these things on hand so that I can whip them out when the time comes.
5. Two days before hand, purchase your ingrediants for salads, baked beans, desserts. Defrost frozen meats.
6. The day before, make your macaroni and potato salads, deviled eggs, and parboil your ribs. If you are using brisket or chicken, season or marinate and place in refrigerator.
7. Make your dessert or pick them up. Keep them simple! Brownies, cookies, a sheet cake etc. are fine for a barbecue.
8. Consider what guests want to drink and whether or not they need to bring it themselves. If you have friends and family that get drunk and disorderly during these gigs, then limit alcoholic beverages. Have plenty of bottled water on hand and make a non-alcoholic punch.
9. Remember why you are having a barbecue. Its your time to have fun too, so don't let yourself get caught up in to making it perfect for all the guests while you are exhausting yourself.
10. When all else fails, buy a cheap pinata and beat the crap out of it! You'll feel better and you get candy in the end! :)

We once had a really fun one by doing a shish-ca-bob party. Everyone brought an ingredient and we put them all on the table next to the bbq. Then every one set up their own stick of ingredients on the table and set it on the bbq to cook.

Great conversation starter and was alot of fun.
