FLUFFY SCRAMBLED EGGS
desired amount of eggs
2 tsp. whole milk
thinly sliced white American cheese (if desired)
Butter the pan and heat until the butter melts. Pour egg yolks into a bowl and scramble into a liquid (must be completely yellow). Combine milk with eggs and scramble until mixed.
When the butter is melted in the pan, add eggs and stir.
Stop for 5 seconds and stir again. When you see little scrambled eggs in the pan, add cheese (cut up) and stir until no liquid is in the pan (all scrambled).

The best way of scrambling eggs easily is in a microwave. into a pyrex basin break two eggs and add a knob of butter, season with salt and pepper being heavy handed with the pepper (white), Set the oven to cook for about three minutes and start up the action not taking your eyes off it for even one second. As it starts to solidify around the edge take the basin out and give the mix a good beating, put it back in and again give it nuke strangth power. After it has been cooked and beaten up a few times it will be ready. If it has overcooked and gone hard, rescue it with more butter and a splash of milk. Pour over some hot buttered toast and live like a king for five minutes as you consume this gastronomic masterpiece. Wish I could come and show you as I have shown my children and grandchildren as they grew old enough to venture into the kitchen. A good thing to start young children on, they will never starve with this knowledge. The age of the eggswill determine how long the dish takes, never more than three minutes but often less... ENJOY!

by clumpy do you mean they separate into small pieces and have a rubbery texture? if so, you are over cooking them and or using too high of a heat .(some people like them this way)
I prefer mine soft.
2 eggs
1tlbs milk
beat these together till creamy yellow.
using a non-stick pan ,put maybe 1 tlbs oil in.
always start with a hot pan and hot oil.
next pour in your egg mix and swirl the pan slowly so it spreads out.turn down your heat and using a spatula(i have a rubber one for this) gently lift eggs from the out side and turn .dont stir alot.( this is the time to add cheese if you want)just make sure all the raw egg comes in contact with the pan.remove from heat while they still look damp in places ,because they will continue to cook even on the plate.
microwave scramble
2 eggs
1tlbs milk
1/2 tsp soft butter/marg
1 slice american cheese
mix first 3 ingrediants together in a micro, safe dish
place in microwave 1 min. on high
stir with fork, add cheese and microwave again 1 min stirring again after 30 sec.
timing may be different depending on your microwave.
again stop cooking while the eggs still look damp.

Whisk 2 eggs with 4 tablespoons of milk, Salt and Pepper (freshly ground is best!) - add whatever else for flavour.
Heat the pan with a knob of butter and a little oil until fizzing but not browning.
Pour it all in and leave for a few seconds for the bottom to start setting and then with a wooden spoon or spatula keep moving the mixture at all times until it is not quite set. Remove from the heat and allow to stand - it will continue to cook. Serve on hot buttered toast.
Scrambled egg will never be totally smooth - only way to achieve that is to make an omelette with same mixture.

Hi there,
Here is a recipe (my own original - my Italian mama taught me and I have adapted it a little) for the best scrambled egg that you will ever make. I do not use milk (thats an english thing and makes it too runny and horrible!).
(2 eggs per person) double ingredients if you are entertaining others
2 large eggs (beaten)
1 pinch of salt (to taste)
Blackpepper (to taste)
½ bunch of spring onions
½ of a small onion diced
a small amount of butter to fry the onions
METHOD: -
1) in a non-stick pan fry the onions and the spring onion off until they are golden brown.
2) Add the salt and pepper to season
3) Add the beaten egg and stir for approximately 3-4 minutes on high.
4) Serve - Yummy, so tasty.
Alternative: - if you like, you can fry off some sliced mushrooms. When cooking the onions add mushrooms for extra taste!

Scrambled eggs always look clumpy! The way I like them (and it's a matter of preference, of course) is not to over-whisk the eggs, just combine the yolk and whites with a splash of milk and some salt and pepper, then cook gently in butter stirring constantly until they've set to your taste - I like them still a little runny. ok heres a method I use for fluffy eggs. Firstly let a bit of butter melt in a pan and while that is happenning beat a few eggs together. Dont add milk. Instead add fresh cream but only add this when the egg is in the pan and beginning to clump. keep stirring for a few mins and serve! It is always advisable to make sure the eggs are fully cooked though to kill off any harmful bacteria which may be in them! you can never be too sure!

3 eggs whisked, a glug of cream (milk will do) Microwave on high and mix with a fork every 30 seconds. (Mixing every 39 seconds is really important.)
By checking it evry 30 seconds you can fix it just the way you like it. For me I like it creamy and take it out after about 2 1/2 mins. I always take it out when it is just under done and leave it to stand whilst I butter the toast. It cooks while it stands.

Ok,I am no chef but this always works with common sense. Always butter pan so eggs don't stick,cook at MEDIUM heat so you don't get that brown nasty burnt "stuff" on the eggs and before you poor the egg mixture in the pan(buttered pan or pam) I add just a little milk and seasoning. Stir as you go and BAM....Awesome eggs...maybe add cheese...Belecimo!

i always do mine in a gd none stick pan put it on high heat while u beat 3 eggs with a little amount of water salt and pepper,then make sure the pan is really hot then put the mixture in the pan and then just move it around its almost like an ommlette but a bit more moister,then they should be perfect!
