Rare: still mooing and blue in the middle.
Grilled with just salt and pepper, and definitely no A-1 or gravy. Maybe a dollop of fresh horseradish, but that's it!

Only one way to cook a steak. Has to be done in a very hot "seasoned" cast iron skillet. A 1" thick T-bone or porterhouse works the best. The steak has to be thawed to room temperature. Lightly seasoned on each side with salt and pepper only. Cook 6 minutes on each side and let it rest for 5 minutes. In the meantime, add a little (your choice.....red wine...chicken stock...butter...or whatever) to the skillet and make some juicy gravy to pour on top before serving. Sauttee some mushroom buttons in butter also. It will be almost medium (just a bit pink) on the inside. Add some wedge fried potatoes and a lettuce and tomato salad on the side (with ranch dressing) and you will be in Texas. A baked potatoe works too...with all the fixins'. Only a "zillion" calories...but...so what? Who can afford to eat like this everyday?

Rare with sauteed onions and mushrooms. A nice baked potato with sour cream and fresh beets. Served with a nice bottle of red wine. Chocolate covered strawberries for dessert.

Medium rare with some fat around the edges,sauteed onions and mushrooms on top,no one around me that will be blowing their noses,picking their teeth or talking while they are chewing their food,when I eat steak,I like to enjoy it

Medium is best. The meat doesn't taste raw anymore, and yet the tenderness of a good cut of meat hasn't cooked out of it yet.
