I'm Catholic, and would love to make a necklace. But instead of the patron saints, I'd like to have it made of out beads that were blessed by a Priest.

Perhaps special prayers could be said over the beads?

Do things like that exist?

Try taking the beads to a priest, and ask for a blessing over them before the necklace is made (or have him bless the necklace after it's made, for that matter). Your priest has probably blessed stranger things. Or you could just take the beads to church, and bless them with holy water.

Years ago I remember seeing a rosary from Spain with beads made from compressed, blessed rose petals,,, absolutely beautiful - perhaps they are sold online somewhere and you could get a set and re-string them?

Call your rectory and ask them...prayers can be said over anything. I would think they would do that for you if you stop by with the beads. (and a reason you want them blessed)

Kind of sacreligious, but oh well. Just have a Priest bless some rosary beads, and where them like a neclace.

Sure. I'll bet you can buy a set from pat robertson or tbn. Sounds like a great moneymaker.
