The same thing that makes other plants green: chlorophyll.

Chlorophyll is correct but dont ever grow this stuff. It is worse to get rid of than Kudzu. It will take over your yard unless you dig it all up, use a complete vegetation killer and call in a Shaman and salt the ground.
Got a patch that I have hacked at for awhile and it is right back to full form as I write.

Chlorophyll which is made during photosynthesis makes mint or any other green vegetable green.

Photosynthesis which takes place in the leaves of the plants in areas called chloroplasts. Chloroplasts are green in color.
