I am a physiologist. The lining of the stomach is constantly renewing itself and stays ahead of the acidic destruction. There is a second major reason in that a layer of slime, or mucus, coats the stomach lining. So you have lots of cells and lots of mucus constantly being replaced. A third but minor effect is that of buffering by this same lining, which means there are chemicals in this lining that counteract the acid, but it is mostly due to the rapid sloughing off of the lining, coated with mucus, and its constant renewal.

It is that thick layer of mucus in the stomach lining produced by goblet cells. Sometimes that protective layer is breached and the stomach can be eaten by the stomach acid and the enzyme pepsin. This is one cause of a stomach ulcer.

The COX-1 enzymes secretes prostaglandins which protects the lining from the acidic pH of the stomach

Well mainly because our stomach is covered in mucus, and buffers neutralize PH levels.

That fluid you are referring to is called Bile and is green in color and comes from the liver.
