Using too much sauce and filling could be your problem. Definately rolling them tighter and placing the closure on the bottom of the pan will help them stay shut.

Do not over cook the corn tortillas. This may be the problem is they are falling apart to look like a casserole. When you make an enchilada,all of the ingredients are already cooked before you fill them. Heat the tortilla to make ply able. Roll filling in the tortilla and leave the ends open. Place seam side down in a baking dish and place them touching each other. Sauce, the pan and add cheese if desired. In most cases the dish is done when the cheese is melted or the sauce just starts to bubble. DO NOT OVER SAUCE

Even if they are corn or flour you should make a whole casserole dish full of them. If you are making only a couple then you need to find a really small casserole dish. The other enchiladas should not allow each other to move around or flatten out. Last resort use toothpicks.

Take a little sauce & drizzle in bottom of casserole dish. Lay enchiladas edge side down & the sauce will help them stick together.......

when you are making your enchiladas simply tuck both ends in, and have the fold at the bottom when placing them in the pan. oh, speaking of witch, use a cassarole dish. with the tall sides it will hold them in place. when placing the enchiladas in the pan, be sure to pack them tight together. also you may be slightly over filling them. maybe try a little less stuffing. oh! and before I forget, you could place a little amount of sauce on the bottom of the pan, to keep them from sticking, and also on top of them. try cheese too.

I'm not sure how you're cooking them, so it's a little hard to answer your question accurately. Personally, I fry my corn tortillas for about 15 seconds on each side, not too hard, not too soft. Then I put in my filling(s), and you need to get about 3 good rolls out of the tortilla. I hope this helps.

I have a couple of guesses.....
You have to roll them and place them seam side down in the pan. As for the casserole issue...you may be putting them too close together. Don't try to squeeze too many in a row.

Definitely roll the tighter. They keep coming loose. And maybe your stuffing them to much.

you need to roll them tighter, maybe use less filling to do so. roll one end and tuck in then roll two sides (to the right and left) then finish rolling in direction of the first roll. to ensure they stay closed you can spear them with a toothpick and then remove those when serving
