Guilt, fear of being caught or maybe even a belief that they can convince you that they're telling the truth even if you provide evidence that says otherwise. Maybe they're a pathological liar. Maybe they are so convinced that they can get away w/ anything. To answer the question "why would they want you to think you were crazy", I think that it could be because they want to transfer the focus from themselves onto you, that way you are questioning yourself and not them.
I really don't know but that was what I thought up! :)

Well, when a person decides to lie to you they will attack your questions because they find them aggressive and feel like they are being trapped. It is a matter of them trying to get out of a mess. If they are lying, they are lying. Don't worry about the hurtful things they are saying to you, just tell them that you are done with their lies and demand respect or will keep out of their life.

Have had this happen to me toooo many times.. They feel guilty. They want to avoid conflict. They think it is better to lie and spare your feelings than tell you the truth.. It is time to cut ties with this person, unless you want to be lied to all the time.. If they do it once, they will do it again.. It doesn't necessarily make them a bad person, it just makes them someone unhealthy for you! And they need to grow up.

They care more about themselves and covering their own *** then they care about you. Show them the proof and bust them for both lying to you and accusing you of being crazy/paranoid.

It's not that they wish ill for the person that they are calling paranoid, rather, it is that they wish to cover their *** and get the person off their trail. "You are crazy." translates into "Please drop it. When you mention it, it makes me feel guilty and I don't want to think about it or admit to you my faults."
