I am starting a small business selling zucchini bread, banana bread,etc. There must be some other really good recipes for these.I'd like to add a few new ones to my file.Thanks everybody!

Hi !!!
Here's one of the recipes that I use...

Pina Colada Bread

4 eggs
1 1/4 cups oil
2 cups granulated sugar
1 teaspoon coconut extract
1 teaspoon vanilla extract
1 teaspoon orange extract
1/4 cup pineapple juice, drained from crushed pineapple
1/2 teaspoon grated orange zest
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 (20 ounce) can crushed pineapple, drained well
1/2 cup flaked coconut
1/2 cup chopped maraschino cherries
1/2 cup chopped macadamia or other nuts (optional)

Heat oven to 350 degrees F. Grease and flour well two 7 x 4-inch loaf pans.

Beat eggs slightly. Stir in oil and sugar. Add extracts, pineapple juice and orange zest.

In a separate bowl, soft together flour, salt, baking soda and cinnamon. Add to egg mixture and mist just until ingredients are moistened.

Gently stir in crushed pineapple, coconut, maraschino cherries and nuts. Do not stir too much or bread will be heavy. Pour into prepared loaf pans. Bake for 45 to 50 minutes or until a wooden pick inserted comes out clean.

Let cool in pan for 10 minutes before removing.

Bake this zucchini bread in 2 loaf pans.

INGREDIENTS:
3 eggs
1 cup vegetable oil
2 cups granulated sugar
2 cups grated zucchini
2 teaspoons vanilla
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon ground cinnamon
1 cup chopped walnuts 1/2 to 1 cup raisins or dates, optional
PREPARATION:
Beat eggs until light and foamy; add vegetable oil, sugar, zucchini and vanilla. Mix lightly but blend thoroughly.
Mix together flour, salt, baking soda, baking powder, and cinnamon; mix lightly. Add dry ingredients to first mixture, stirring to blend. Stir in walnuts and raisins or dates, if using.
Pour batter into two loaf pans, 9x5x3-inches in size. Bake at 325° for 50 to 60 minutes, until a toothpick inserted near center of a loaf comes out clean.
Cool and serve or wrap and freeze.

Luxury Loaf

"This is a different kind of loaf and has a smooth texture."

INGREDIENTS
1 cup margarine
1 cup white sugar
5 eggs
1 teaspoon vanilla extract
1 tablespoon grated orange zest
1/4 cup orange juice
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
4 (1 ounce) squares semisweet chocolate, grated
1/3 cup chopped walnuts

DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Grease one 9x5x3 inch loaf pan.
Cream butter and sugar together until fluffy. Beat in eggs one at a time, beating well after each addition. Stir in vanilla, orange rind and juice.
In another bowl, put flour, baking powder, salt, and nutmeg. Stir in grated chocolate and nuts. Pour into first bowl. Stir all together until moistened. Spoon into a greased 9x5x3 inch loaf pan.
Bake in 325 degree F (165 degree C) oven for 1 hour and 15 minutes until a toothpick inserted in center comes out clean. Let stand 10 minutes. Remove loaf from pan to cool on cake rack. Wrap.

Oatmeal Grapefruit Quick Bread
"A zingy, zippy new oatmeal bread. Tart and sweet at the same time!"

INGREDIENTS

* 3 cups all-purpose flour
* 1/2 teaspoon salt
* 4 teaspoons baking powder
* 3/4 teaspoon baking soda
* 2/3 cup honey
* 1/4 cup margarine, softened
* 1 2/3 cups rolled oats
* 1 egg
* 1 1/4 cups grapefruit juice
* 1 cup chopped walnuts

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. Sift together flour, salt, baking powder and soda into a large mixing bowl.
3. In a medium bowl, mix honey together with butter or margarine until creamy. Add to flour mixture along with the oats, egg, grapefruit juice and walnuts. Stir together until smooth and pour into a lightly greased 9x5 inch loaf pan.
4. Bake at 350 degrees F (175 degrees C) for 1 hour or until a toothpick inserted into the center comes out clean.

I have this one that I like a lot:
Mangoes and Cranberries bread:
INGREDIENTS
2 eggs, beaten
1 cup white sugar
1 cup fresh mango puree
1 tablespoon orange zest
3 tablespoons canola oil
2 1/2 cups flour
1 teaspoon salt
4 teaspoons baking powder
1 cup chopped cranberries
3/4 cup chopped walnuts
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, beat together eggs and sugar until smooth. Thoroughly blend in mango puree, orange zest, and canola oil.
In a separate medium bowl, sift together flour, salt, and baking powder. Blend into the mango mixture. Fold in cranberries and walnuts. Transfer to a medium loaf pan.
Bake 55 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Cool 10 minutes before turning out onto a wire rack.

3/4 cup light brown sugar
1/3 cup butter or margarine

1 can (8-9 ounces) crushed pineapple, undrained
1 teaspoon vanilla extract
1 cup chopped walnuts or pecans
2 1/4 cups sifted flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt

1 tablespoon granulated sugar
1/4 teaspoon cinnamon
1/4 cups chopped pecans or walnuts
PREPARATION:
Preheat oven to 350°. Cream together the sugar and butter or margarine; add eggs and beat just until blended. Stir in pineapple, vanilla and 1 cup chopped nuts. Sift together flour, baking powder, soda and salt. Stir sifted mixture into pineapple mixture just until blended. Spoon batter into a well-buttered loaf pan. Combine topping ingredients and sprinkle over batter. Bake for about 1 hour. To test for doneness, stick a toothpick into the center of the loaf. If it comes out clean, the bread is done.

Bake at 350 degrees F for 1 hour or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

1 cup shredded sharp Cheddar cheese
1/4 cup sugar
1 teaspoon garlic powder
1 1/2 cups milk
1/4 cup vegetable oil
1 egg
DIRECTIONS
In a large bowl, combine flour, cheese, sugar and garlic powder. In another bowl, whisk the milk, oil and egg. Stir into dry ingredients just until moistened. Pour into a greased 9-in. x 5-in. x 3-in. loaf pan. Bake at 350 degrees F for 55-66 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
