I have some Butter Pecan flavor waffle syrup in my fridge. I only occassionally eat dishes with syrup and it has been in there a couple of years now. Really it's just liquid sugar so can it eventually spoil?

It can't really spoil if you don't get water in it. The low water activity caused by the great amount of sugar present will not support the growth of bacteria. There are a few molds that might grow on it, but that would be visable and you could just toss it out if the mold was seen. If a little water got in, the liquid might support yeast growth. This would be apparent by the bubbling and yeast/alcohol smell. It would take a fair amount of water to dilute it down to where the syrup would allow the growth of bacteria that were harmful.

I like a lot of syrup! Why would you feel bad about the amount of syrup you use? something my friend does when he eats pancakes: stack them all up (if they weren't already) then cut a hole in the middle of the stack so it's like a well, then pour syrup into the well... apparently it soaks the pancakes with syrup from the inside out, and if syrup is still standing in there, you can use it to dip in too! I've never tried it, but he says it's great!

I suppose maybe eventually... but keeping it in your fridge is probably the best place for it. If it's less than a year old, i wouldn't think twice about using it.

Real maple syrup is another issue. Once opened, it must be refrigerated.

I don't think sugar will "go bad". It can crystallize after a bit; in which case you heat it in pot of water.

its mostly sugar so it should be fine for a long time, not to say it isnt possible

no but it can cyrstalize if not in the frig. Yes if in the frig it can mold and go bad.

I don't think u have to worry. As long as it's not all crusty and gross i would use it.
