Quick Fix Barbecued Fajitas
Prep Time: 15 min
Total Time: 40 min
Makes: 4 servings, 2 fajitas each

1 lb. boneless skinless chicken breasts, cut into strips
1 medium each: green and red pepper, cut into strips
1 medium onion, cut into thin wedges
1/2 cup KRAFT Original Barbecue Sauce
8 TACO BELL® HOME ORIGINALS® Flour Tortillas, warmed
1 cup KRAFT Mexican Style Shredded Four Cheese
1/2 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

PREHEAT grill to medium-high heat. Toss chicken and vegetables with barbecue sauce. Let stand 5 min. to marinate. Poke holes evenly in bottom of 13x9-inch disposable foil roasting pan with a fork or skewer. Place chicken and vegetables in pan. Place pan on grill; cover grill with lid.
GRILL chicken and vegetables in pan 20 min. or until chicken is cooked through and vegetables are crisp-tender, stirring occasionally.
SPOON mixture evenly onto tortillas; top with lettuce, cheese, salsa and sour cream. Roll up.

Shortcut
Substitute stir-fry basket for foil pan. Reduce grilling time to 7 to 10 min.

Easy Cleanup
Place chicken and vegetables in a resealable plastic bag. Pour sauce in bag; seal bag. Using fingers, massage bag to distribute sauce.

I am a great one for mixing up the leftovers.
For lunch today I fixed:
1 onion quartered and sliced
some chopped up carrots that were in the fridge too long
Put them in a skillet with oil and started a saute.
Then put in:
sweet corn that I cut off the cob from yesterday's cook out.
about 8 pea pods that were wilting in the fridge
chopped up meat that was leftover from grilling yesterday
cooked it all for about 15 minutes with the lid on
Then put in a couple sprinkles of soy sauce because that's all that was left in the bottle
a couple sprinkles of basalmic vinegar and white wine vinegar, just to see what they would taste like in the mix.
and a few twists of some sea salt/garlic spice
I served it on a bed of cooked rice.
It was actually very good, my hubby had some for lunch before he went to work.
And of course it made more than we could eat so we now have leftover leftovers.

Ranch Chicken

6 boneless chicken breast
2 10 oz cans Rotel
1 can cream of chicken soup
1 can cream of mushroom soup
1 large onion, chopped
1 20 oz bag plain tortilla chips
8 ox cheddar, shredded

Rinse chicken and pat dry. Cut into bite sized pieces. Combine chicken, Rotel, soups and onion in saucepan; mix well. Cook until heated thru, stirring constantly. Layer chips, chicken mixture and cheese alternately in baking pan until all are used, ending with cheese. Bake at 375 until bubbly.

Basil Chicken & Vegetables

Prep/Cook Time: 20 min.


1 tbsp. vegetable oil
4 boneless chicken breast halves
1 can (10 3/4 oz.) Campbell's(R) Condensed Cream of Broccoli Soup OR 98% Fat Free Cream of Broccoli Soup
1/2 cup milk
1/4 tsp. dried basil leaves, crushed
1/8 tsp. ground black pepper
1 bag (16 oz.) frozen vegetable combination (broccoli, cauliflower, carrots)


Directions:
HEAT oil in skillet. Add chicken and cook until browned.
ADD soup, milk, basil, black pepper and vegetables. Heat to a boil. Cover and cook over low heat 5 min. or until done. Serves 4.

season some chicken pieces with seasoned salt, garlic powder, and black pepper.
in a lightly oiled skillet, brown the chicken on both sides.
pour a can of cream of mushroom soup over the chicken and a half can of water, and a dash of dried thyme. let it simmer on low heat for 25 minutes with a lid on.

serve this dish with dinner rolls, rice or mashed potatoes, and a green vegetable.
