For my Sweet Sixteen on June 2nd, three of my friends and my mother and I are going to a Spa all day. We have breaks in between, but we don't have time to get lunch out. Because of that, we want to pack lunch the night before. What are some light, healthy, and spa-y things that we could make? Thanks!

An amazingly yummy snack is yogurt, berries/fruit and granola! It's simple to make, and super healthy!

Actually, your spa might just be one of those that serve a light lunch as part of their spa packages. When I have treated myself to a full day of beauty at one of those, here's what I've been served (not all at the same time!~):
1. Fresh fruit cup with oranges, pineapple, and strawberries
2. Miniature bran muffins and orange scones
3. Cheese platter with crisp green grapes
4. Sandwiches on wheat bread, crusts removed, with light cream cheese, sliced olives, tuna salad or egg salad, and lettuce.
5. Lots of Pelligrino water with lemon
6. Miniature chocolates
Check with the spa first and also find out if they can order you something from nearby. This might save you having to store something etc. And, Happy Birthday!

Grill some chicken breast, brushed with caesar dressing. Cool, slice into strips and put in a container. Take some plastic bags and put torn romaine in one, croutons in another and shaved parmesan. Don't forget your container of caesar dressing. You can bring a jug of iced tea, I've tried the 4C brand of white ice tea with blueberry. And some cubed melon served with low fat vanilla yogurt to dip in would be a nice finish. Have a great spa day!

What about some light cucumber and watercress sandwiches. Trim the crusts. They pack well, are cool and refreshing. Pack some plain yogurt separately for dipping your sandwich. Some nice light cantaloupe or something would go great with that.

- You could make up small salads in plastic bowls with lids (add anything you like and be sure to add some protein, i.e. grilled chicken, tuna, turkey, beans).
- Finger sandwiches (with something that's ok to sit awhile, so no mayo) made with hummus and veggies, or tortillas rolled with beans, lettuce, cheese, and salsa.
- Veggies like carrots, celery and some peanut butter to dip into.
- Fruit that will be ok if eaten at room temp., I would suggest some seedless grapes, plums, or sliced kiwi (in little plastic containers).
- Pita chips or wheat crackers.
- Small bottles of flavored seltzers.
