I start at the pelvis, and make steps of it. I cut the skin until i get to the rib cage, and then remove all of the organs from the pelvis to the ribs. I then cuy open the rib cage with a saw and then remove the rest. some cut around the butthole, but its not nessasary. when you first cut it, lift the skin up a little so you dont stick a knife into guts-then you have a mess.

Okay, Now that you'ved read all the BS answers from people who've never really figured out how to get the tasty meat out of an animal standing out in a field, I'll tell ya what ya need to know. I've field dressed a BUTTLOAD of deer and elk. (I used to be a hunting guide)
Okay, first, get a good knife, and learn to get it SHARP! Generally, you'll have no use for a long BOWIE type knife. Any knife with a blade over 5 inches is just gonna be detrimental. You'll end up popping the gut or intestines.
As soon as possible after the kill, cut the throat. If the hearts' still beating at all, this will allow more blood to escape, which will improve the taste of the meat.
As for dressing, are we going to dinner, or a cocktail party? Remember, don't wear white past labor day! .........kidding!
Once you've cut the throat, roll the deer onto it's back, and, right where the ribs come together in a "V" shape, in the middle of the chest, lift up the skin, by pulling up on the hair. This works best if you're sitting astraddle of the deer. Poke the knife up under the skin, towards the rib bones. This keeps you from poking the guts, which ruins the meat. Once you have the hole made, lifting up on the skin as you go, cut upwards, towards the head, then remove the throat and windpipe from the neck. Now, turn around, and put your finger on the back of your knife blade, up near the tip. This ensures that you don't puncture the gut or intestines. You'll also want to prop a stick between the hind legs, while working on the back end of the deer. This makes things WAY easier. With your finger protecting the knife tip, cut downward, towards the butthole. When you encounter the sex organs, just cut around them. When you get to the butthole, resharpen your knife, especially the tip of it. reach inside the deer, grab ahold of the intestine, (buttpipe) and CAREFULLY cut around the butthole. you don't have to cut right next to it, just relatively close to it. once you get the buttpipe cut out, just turn the deer on it's side, and dump as much of the inside out as possible. There will be some connective tissue still clinging inside. You can generally tear this with your hand, so don't use the knife, unless you need it. Once you get all the organs out, you're done field dressing. If you're gonna toss it in the truck and take it to the packing house, throw a couple sacks of ice inside the body, (I prefer 3-4) and wrap it in a blanket. The blanket will allow the ice to do it's job on the entire animal.

I cut around the back part of the testicles and penis, so they can be removed. Cut around the butt hole like you were coring an apple. Then cut from where the penis was to the chest cavity,just through the skin so you don't hit no inners.Pull all the stuff out. There will be a thin lining that you will have to cut to remove the lungs and heart. I leave the esophagus in until I get the deer home. It is good to have one show you on your first deer. Once you see it done it's a piece of cake.

Ah...I remember when I had to gut my first deer... good times.
Well, get a small pocket knife, and get it good and sharp. You dont want to use too big of a knife, or you will cut open the guts, and have a mess all over the place. Start between the hind legs, pierce the skin, and pull up and away from you. You want to cut it from the butt to the chest cavity. Then, you cut off the throat and the asshole, and scoop all the inards out. Also, look out for the lungs as well. Remember, be careful when cutting the deer open, for you dont want to get too deep. You cut open the stomach or intestines, and youll have all kind of nasty all over the inside of the deer...not healthy at all.
Once you have it, you're supposed to bag up the intestines, but I hunt on my own property. I usually just let it rot there...coyotes will come by. or skunks, or raccoons, or foxes.
