My money is on Paul McCartney. He can sing, play guitar, bass and drums. Even if he isn't the best in the world he is still one of the better ones.

Though we of course have no recordings of them, my vote would be for either Frédéric Chopin [19th century] or Niccolò Paganini [18th-19th centuries].
Chopin's compositions for piano are some of the most densely written and difficult in all of piano literature, and he reportedly was able to play them effortlessly. He was friends with Franz Liszt, a stellar pianist who conceded that Chopin played Liszt's works better.
Paganini is considered to be the greatest violinist who ever lived. He was so astoundingly phenomenal that rumors circulated that he had sold his soul to the devil in exchange for his abilities -- he even had to publish a letter stating that he had not done so.
I suppose Johann Sebastian Bach and Wolfgang Amadeus Mozart should have been on this list, but you asked for "best musician" rather than "most genius-level composer." :-)

Mile Davis. He was an excellent trumpet player. Most of all though, his influence in the jazz world was felt from the 1950s. In each of the decades of the 50s, 60s, 70s and 80s; he started new branches of jazz that caused changes that continue now.

For this period the eighteenth century Bach, he died in 1715, Bach, he was not only a great musician but a great composer as well. Their are so many greats from this century, it would be way too hard to name just one.Bach is one of my favorites to play on the classical guitar.

I'm a huge fan of Dave Matthews. He plays, he sings, he writes, he owns a farm that sells organic fruit and veggies, and he seems to really care about the environment. And he has his own Ben & Jerry's ice cream (Magic Brownie)
