Chocolate Chip Cookie Bars
As a base, this chocolate chip cookie bar recipe uses an award winning chocolate cookie recipe that Lisa found on the web. That recipe has hundreds of positive votes from users who've made it.
Ingredients
4-1/2 cups all-purpose flour
2 teaspoons baking soda
1-1/2 cups butter, softened
1-1/2 cups packed brown sugar
1/2 cup granulated white sugar
2 (3.4 ounce) packages instant vanilla pudding mix
4 eggs
2 teaspoons vanilla extract
4 cups semi-sweet chocolate chips
Steps
Preheat oven to 350 degrees Fahrenheit
Into a large bowl, sift together, flour and baking soda and set aside
In your mixer bowl, cream together butter, brown and white sugars
Beat in both packages of pudding mix until blended
Stir in eggs and vanilla
Blend in the flour mixture (you may wish to blend in flour mixture by hand so as not to overwork the dough, I use a heavy rubber spatula for this)
Finally, stir in chocolate chips. If it's too hard to stir these in, use your hands to gently work them into the dough
Spread dough into an ungreased 13" x 17" jelly roll pan. I used my hands at first, then smooth it out with the back of the spatula
Bake for 20 to 25 minutes. Bars will be browned when done
Once removed from oven, set pan on a cooling rack, when cool, leave bars in pan, cut and serve
Makes about 48 squares

Luscious Layer Bars (Cookie Mix)
Indulgent homemade bars are in the oven in 10 minutes thanks to a quick layering technique.

Start to Finish:3 hr
Makes:36 bars
1 pouch (1 lb 1.5 oz) Betty Crocker® chocolate chip cookie mix
1/2 cup butter or margarine, softened
1 egg
1 cup butterscotch chips
1 cup milk chocolate chips or semisweet chocolate chips
1 cup flaked coconut
1 cup chopped walnuts
1 can (14 oz) sweetened condensed milk (not evaporated)
1. Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
2. In large bowl, stir cookie mix, butter and egg until soft dough forms. Press dough in bottom of pan using floured fingers.
3. Bake 15 minutes. Sprinkle with butterscotch chips, chocolate chips, coconut and walnuts. Drizzle evenly with condensed milk.
4. Bake 30 to 35 minutes or until light golden brown. Cool completely, about 2 hours. For bars, cut into 9 rows by 4 rows.

1 pouch Betty Crocker® chocolate chip cookie mix
1/2 cup butter or margarine, softened
1 egg
1/2 cup coarsely chopped pecans
24 caramels, unwrapped
1 tablespoon milk
3/4 cup pecan halves
3 tablespoons semisweet chocolate chips
1 teaspoon shortening
1. Heat oven to 350°F. In medium bowl, stir together cookie mix, butter, egg and 1/2 cup chopped pecans until soft dough forms. Press evenly in ungreased 8-inch square pan. Bake 28 to 33 minutes or until golden brown.
2. Meanwhile, in 1-quart saucepan, heat caramels and milk over low heat, stirring frequently, until melted and smooth. Remove from heat.
3. Carefully spread melted caramels evenly over warm bars; sprinkle with pecan halves. Cool completely on cooling rack, about 1 hour.
4. In small microwavable bowl, microwave chocolate chips and shortening uncovered on High 30 to 60 seconds, stirring every 15 seconds, until melted and smooth. Drizzle over bars. Let stand about 30 minutes or until chocolate is set. For bars, cut into 4 rows by 4 rows.
