Get them a pretty brass doorknocker to grace the entrance of their new home. You can have either their monogram or "The Smith's" (whatever their last name is) engraved on it. I used to work at Things Remembered and did these ALLL the time for wedding gifts, sometimes they would even include "Est. 2007" (whatever their wedding year was) It's small, can be packed easily needing minimal room - durable, will not need to be packed "carefully" to avoid breaking - and will last them their lifetime.
Check out Things Remembered online if you don't have one in your area. They also have other "small" items that would pack easily like photo frames/albums, clocks, paperweights, etc.
Other than that, maybe a certificate for dinner at a really nice/romantic restaurant. A new digital camera would be a nice gift.....

If you know her new address, maybe you can have a meal delivered when they arrive or the next day. They will definitely be hungry and not have things put together enough to unpack their cooking utensils.
You could have a local grocery store deliver some groceries to stock their fridge.
Gift cards or cash are usually best. But also include something personal (the monogrammed door knocker was a great idea, a few new picture frames for the new house).

Normally I don't advocate gift cards, but in this situation it would be perfect. She's going to need stuff for her new place and since you've never seen it, yout don't know what that stuff is. Do an online search of her town to see what stores there are. You don't want to get a Target card if the nearest Target is 2 hours away.

I would give her a nice size gift card for gas. Or a check. If you gave her a gas card, I bet she'd be smiling and thanking you for that while she's pumping gas (or her husband is pumping gas) thinking, Gas is so expensive. I gotta love my friends who gave me gas cards. Thats just my opinion though.
Or gift card to a fast food restaurant, if its a long trip anyways, because they're going to have to stop and eat, and they wont have to dig into their wallets or purses. Something like Subway. Everyone loves subway.
And again, those are things that I would like for gifts if I was moving away.
Otherwise, just give her money. Its always handy. There are so many extra expenses while moving.

That's a tricky one. I know I hate giving gift cards/cash, but in this case it's probably for the best.
Think about it. Gift cards are really easy to transport. Your friend won't have to pack it up, and if you get it for somewhere like Wal-Mart or Target then they can buy supplies for their move. It's really beneficial.
But if you are dead set on getting them something tangible I would get them a whole cleaning kit. Stock them up: broom, mop, swiffer, swiffer cloths, multi-purpose cleaner, glass cleaner, toilet cleaner, toilet brush, laundry supplies, dish washing detergent, etc. That way they have this stuff when they get to their destination and don't have to buy anything. I know I don't like to have to move half used chemicals, and I throw out used toilet brushes, etc.
You could also make them a moving kit with the bare necessities for that first night in their new place: Toilet paper, paper towels, multi-purpose cleaner, screwdriver, hammer, nails, hand soap, maybe you could even throw in a gift card to a restaurant (cause you know they won't want to cook that night... maybe pizza, like dominoes, or something as simple as McDonald's).

I would find out what kind of stores and restaurants they have around where she will be moving to. A restaurant gift card would come in handy for the day they move in and don't want to cook.
I would also get her something small and sentimental from where she is moving away from. Is there something she is going to miss? Does she love something that is locally made? I would get her something along those lines that she can put in her new home to remind her of her old town. Good luck!

Cash...or you could give her a card with a note that says the gift will be shipped after they move to the new address-you can get anything shipped directly to them.

Honestly the thing she would probably be most grateful for is cash. Moving is quite expensive so it will help her in that respect. Also by not buying an actual gift, that's one less thing she has to pack up and haul to the new place.
