Nellie Melba was born Helen Porter Mitchell. She took her stage name "Melba" from her home town, Melbourne. (Another Australian opera singer, June Bronhill was born in Broken Hill and took her name from there.) She was a great opera singer but became particularly famous for taking some time to retire. She was doing farewell tours for about ten years before she finally stopped singing.

Unless I am totally wrong and someone can show me otherwise, the dessert Peach Melba was created in her honour
