These are all native Mexican foods which have survived in various forms down to modern times and can all be found in the restaurants, homes, markets or street stalls of Mexico today. Of course the famous Cochinita Pibil of the Yucatan and Quintana Roo states is now made mostly with pork (introduced by the Spanish) rather than the roasted iguana and monkey meat of the Mayan times, but it is still made using the ground achiote seeds, banana leaves and sour oranges of centuries ago......
Foamy hot chocolate is still a favorite drink here just as it was for Aztec emperors 700 years ago.......
Oh and lets not forget the lowly "taco." The flat round corn tortilla and the idea of sticking, folding or rolling something good to eat inside with a spicy sauce has been around in Mexico for a couple of thousand years at least.........

After living in Mexico for 20 years, I would have to say tortillas and pinto beans. My wife said that is sometimes all they had to eat. Fresh fruits and veggies, rice, and sometimes a piece of beef, pork, goat, or chicken.
I have eaten many meals without a fork. You use your tortilla.
Serrano peppers and a few jalapeno peppers were everyday cuisine.
Most food was rolled up in a tortilla. Sometimes fried. These were the tacos. If you had cheese it was put into the taco.
These were daily staples. If you want to expand that, I don't think I have time to list them all, nor do I think you would read them.
I would like to point out the burritos is a US designed item. If you asked for a burrito 40 years ago in Mexico, someone might just bring you a donkey, and ask how you wanted it fixed.

Chiles en nogada, mole, rompope(drink) all originated from Puebla. Some other foods are pozole, Rosca de Reyes (Three Kings Sweet Bread), bolillo, flan, and pan de muertos.

Tacos are very popular but not like we have them here. They use soft tortillas only, and most filling are grilled. Either beef, chicken or fish, which is very traditional. As far as toppings go, just a little hot sauce, lime juice and cilantro.
