so we need a clever name. It's a competition with the other groups in the class so we need to be CREATIVE. our cookies are chocolate chip, and we're putting smiley-faces on them with icing. we need something random, clever, or both!

I am a professional baker and I sell alot of chocolate chip cookies. Can I give you a suggestion about your icing? Don't buy icing - it tastes gross and costs alot more than you need to spend.

A good icing to use is Royal Icing. It is easy to make and to use. PLUS, when it dries, it is hard so when you package your cookies, you won't end up with smashed up smiles.

You will need a mixer - either one you hold in your hand or a stand mixer.

Ingredients:

1 egg. Seperate the yellow yolk from the white. The easiest way to do this is to put the whole egg in the bowl and then use your hand to GENTLY take out the yolk.

Start mixing the egg white until is starts to get white and starts to get foam on top. Once this starts, turn off your mixer and add this stuff:

A pinch of salt
A teaspoon of vanilla

Then mix this stuff together on high speed. Once it starts to volumize (starts to look like it is growing), turn the mixer down to the lowest you can and add...

Powdered Sugar. I can't tell you how much you need because it can be different every time you make royal icing. Pour alittle in at a time and mix it in - keep adding until the icing starts to get thicker.

Here is the hard part. You have to get the icing thick enough to "hold its form". To check this, turn off the mixer and grab a spoon. Put the spoon on the top of the icing and pull it up. If the icing sticks to the spoon and makes a string you can pull with the spoon, it is perfect!

If you want to add food coloring, do so now and mix it in.

To decorate your cookies, put the icing in a ziplock bag and close it up. You might have to leave it open a very little bit to let the air out. With scissors, cut one of the bottom corners off just a little bit to make a little hole for the icing to come out.

Decorate your cookies and let them sit until the icing gets hard.

The cool thing about this icing is that it tastes good and that, once it is dry, it won't make a big mess.
