Call her up tomorrow morning and find out if she needs you to pick up anything for her or see if she needs help. If she sounds hesitant yet says 'no' then show up an hour early, strap on an apron and say "Ok, what can I do?"
Happy Memorial Day!!

You can never go wrong with a good potato salad- and if you don't have time to make one up your local grocery store should have one that is pre-made. Also, you can buy a couple of bell peppers, white onion and tomato- chop all well, put in a foil packet with butter and seasoning and throw on the grill or in the oven at 375 for about 15 minutes. Cheap, simple, YUMMY.

Take your own lovely self. Talk to your husband......I'm sure he's been to many family events through the years and knows who has what specialty. Try not to out-do your MIL.
You can make several different dips and use red/yellow/green bell peppers as the "bowl",(the kids won't mind getting dip out of this "bowl", as they won't be eating the peppers, or a canteloupe 1/2 for a fruit dip "bowl".
Here's a dip that is always popular, and you can use a large fresh artichoke (hollowed out) as the bowl.
warm spinach artichoke dip
2 packages frozen spinach thawed and drained well .
3 packages cream cheese( leave out to soften)
1 cup romano cheese
1 cup adagio cheese
1 large jar artichokes mashed up
1 jar roasted red peppers (dice)(optional)
1 cup fat free half and half
in a large sauce pan add half and half, cheeses and cream cheese add 2 T garlick powder salt and pepper to taste and melt over low heat when all is melted add spinach roasted red peppers and artichoke hearts. continue to heat until all thick and bubbly serve w/ tortillia chips or sliced pita bread pieces.

Ask if you can take a dessert...cupcakes can be fun and easy and will impress the kids. For an easy dish, I take cans of baked beans, place in a baking dish in a 350 degree oven, bake for at least an hour, and stir ever so often. Don't cover, you want to cook out some of the juice. If it were me, I would make both! Good Luck!

You could get a big loaf of sweet hawaiian bread. Rip a hole in the middle and put a tub of spinich dip in the middle. People can rip at the bread and dip it. Or for the kids they can eat the bread as is.
Or Jello Jigglers! All kids like that its quick and easy. Use cookie cutters for fun shapes.
Or make fruit pizza! Google it to find tons of easy recipes for it.
My last favorite is good ol' trail mix. People can munch on it while they wait for the burgers and dog's to finish.

Kids love cold cuts (pick low fat ones like turkey etc), and she'll probably serve bread anyway so you won't need that. If not watermelon, how about a mixed fresh fruit salad! Easy to prep and food-safe for transport. Don't take it in a metal bowl though! Glass bowl is best, transfer salad mixture to a bowl just out of the freezer prior to the drive over to Mom's.

You cannot go wrong with a green bean casserole. It is very simple to make.
3 small cans of french cut green beans.(Drain)
1 can of cream of mushroom soup.
1 cup of shredded mozzarella cheese.
Salt and pepper to taste.
1 can of dried onions.
Mix all ingredients except dried onions. Put in casserole dish and sprinkle dried onions on top.
Place in oven and bake for 20 minutes at 350 degrees.
The kids who do not like onions will love it too.

What about steak. Put Tomato sauce, bbq sauce in a bowl and leave the steak in the bowl overnight with gladwrap on it. When you want to cook it - tastes great. You can try Egg salad or pasta salad. Just type in Google for the recepie. In australia we can buy sausages with garlic and crap like that as well.

Call your mom-in-law or, better yet, your sis-in-law and ask for a suggestion... Tell her you want to bring something the kids will enjoy... she'll appreciate the thought.
or make caramel krispies... they are always a hit and you'll be the new favorite aunt... I used to make these with my preschool kids and they would disappear before they set...
CARAMEL KRISPY MARSHMALLOWS
1 can sweetened condensed milk
1/2 c. butter
1 bag (8 oz.) caramels
1 bag (10 1/2 oz.) large marshmallows
5 c. Rice Krispies
Melt caramels, butter and sweetened condensed milk in top of double boiler. Dip large marshmallows into mixture and roll in Rice Krispies. (Fun to do with kids.) (Try mixing all together for bars.) ....
I used round toothpicks to dip each marshmallow and then rolled them in the rice crispies... then set them on a cookie sheet lined with wax paper... You can throw the whole cookie sheet in the freezer to set.. Instead of caramels.... use two mcintosh toffee bars (unless that's a canadian thing) ... and don't bother with the double boiler thing, just melt the caramel, butter and milk in the microwave, stir, dip, roll, ENJOY!
