The first 3 repondants must be making a high fat version, all the recipes I have seen and I had it once in a big family run restaurant in San Antonio TX, did not find it to be fatty, the calfs foot and pigs feet most recipes call for are not fatty, they do have some fat, but add more flavour and body to the soup.

And depending on whether your using canned or dried Hominy, the thickeness can vary, I made it once but used short ribs and pork riblets, mainly for the meat after it is cooked and I also used the dried hominy, I buy it at a small place in Toronto Canada in the Kensington market that sells every bean possible.

If you cut the tripe into strips it will cook faster and absorb more of the broths flavours, I like mine spicey, and add a few chilis to the cooking vessel, this is a great soup for a hangover or to start the day after a long night out, it will wake you up for sure, especially if you go the place in San Antonio the place is rocking at 7 am.

There is no reason for it to be fatty. The main ingredient tripe is extremely low in fat. If a specific cook makes it with a lot of extraneous lard that is where the fattiness comes in . It is not an inherent part of the recipe though.

No, it does not, if you use the correct recipe. Menudo is usually prepared really greasy because a lot of people is used to that. So they do not complain when served that greasy boiling thing.

In fact, most of "Mexican" food in the US is prepared really grease, but is does not have to be that way.

There is something similar to menudo in Japan, and it is not greasy at all.
