Vegetarian Baked Pasta [8 servings]
1 pound penne pasta
2 tablespoons olive oil
8 ounces portobello mushrooms, cut into 1/2 inch pieces
1 teaspoon dried basil
1 teaspoon dried oregano
2 cloves garlic, minced
1 (28 ounce) jar spaghetti sauce
4 cups shredded mozzarella cheese
8 ounces Gorgonzola cheese, crumbled
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Pour a glass of ice water over the pasta to stop the cooking, but do not rinse thoroughly.
Preheat oven to 350 degrees F (175 degrees C). Coat a 9 x 13 glass pan with olive oil. Heat 2 tablespoons olive oil in large skillet. Add mushrooms. Cook for 2 minutes then add basil, oregano and garlic and cook 1 minute more. Add sauce to mushroom mixture and stir.
To assemble, pour enough sauce in the bottom of the pan to cover. Combine the remaining sauce and the pasta. Place one-third of sauced noodles on top of sauce in pan. Top with 1 cup of mozzarella and one-half of the gorgonzola. Repeat for a second layer. Put the final third of the noodles in the pan and top with the final 2 cups of mozzarella.
Bake for 30 to 45 minutes, or until cheese is browned. Serve.

sliced roma tomatoes
sliced FRESH mozzarella
chopped fresh basil
good first cold pressed olive oil
balsamic vinegar (optional)
arrange the tomatoes and cheese on a plate, sprinkle the basil over top. drizzle some olive oil and balsamic over everything.
Pasta Salad
I box of Barilla tri-color fiori (wagon wheels)
red bell pepper
celery
carrotts
grape tomatoes
any other veggies that make you happy
Good Seasons garlic and herb salad dressing
cook the pasta,
make the dressing according to package directions,
chop the vegetables,
drain the pasta,
rinse in cold water
shake off excess water
combine pasta, chopped veggies, and dressing
FYI - it's not very nice to judge your parents because they don't happen to follow your beliefs. People have been eating meat since both came into existence. You are never going to convert the whole world and you shouldn't try. How would you like to be forcibly converted to a meat eating?

Here's one of my favorites; peanut butter quesadilla!
three corn tortillas
peanut butter
butter
refried beans
chile sauce
pepper-garlic sauce
grated cheese
Spread the peanut butter on a corn tortilla and add a couple of dabs of butter
on top of that put another corn tortilla and spread with the refried beans and sprinkle with chile sauce
on top of that put another corn tortilla and spread with the pepper- garlic sauce, then sprinkle with the cheese.
Put it in the microwave for 1-1/2 minutes, until the cheese is melted.

Things you need:
soy sauce for flavor (about 1/4) cup
a block of soft tofu. cut it in an inch thick squares. set aside.
2 large Japanese eggplants (they are lighter in skin) and wash them but don't peel them. chop that about the same size. set aside
chop 1 whole sweet red bell pepper and set aside.
Heat up 5 table spoons of olive oil in a frying or saute pan, then put 2 (or more if you wish) minced garlics in it. let it fry for 1 minute. then add the ingredients....let them saute together. you can add a spoon of sugar and a pinch of salt (optional)serve with white or brown rice.

you know there is vegetarian steak you can buy and eat, its just as good as the real steak and you wont be taking any risk factors you can make a veggie philly cheese steak... or you can make some veggie burgers,(although I like the steaks more

Texas Caviar
1 can black eyed peas – drained
1 can black beans – rinsed and drained
1 can mexicorn or fiesta corn – drained
1 small can chopped jalapenos or green chiles
1 can chopped tomatoes
½ bottle of italian dressing
½ chopped onion
chopped cilantro
crumbled cotija mexican cheese
Mix all ingredients in a big bowl and start munching
