Add more plain rice to it.

If you add 1 cup plain, raw rice, up the water to 2 cups. This may require 4-6 more minute sof cooking. Do not open the lid and peek once you've set your timer or the rice wont' get cooked.

don't use a box mix. there is no way to take out salt or spice from a pre-made mix. the only way is to make it yourself, so that you control how much hot goes in.

jambalaya is easy to make and you can find recipes everywhere - try www.foodtv.com or www.allrecipes.com. reduce the amount of cayenne or red pepper called for in the recipe to taste - and if you are cooking with cajun sausage, you can leave out the cayenne altogether, since the sausage is spicy enough for the whole dish.

I would simply not use the entire spice packet when you make it. You can add rice and additional sausage to further cut down the heat.

I would say cook some plain rice seperately and add it after the fact. Also, add something that cancels out heat, like lemon.

I got a good idea
Contact them at their web site and suggest they package the hot spice in a separate baggie so you and I can toss it out.
