We are supposed to bring in a International dish. But I am not a good cook and 90% of the families are not from the US so there parents are going to bring in great international meals. I am a Vegitarian and would love to bring in a great Vegitarian meal that kids and other non-vegitarian adults would like. Any suggestions?

Well, pick a cuisine that's going to be different from the other ones brought in. No sense in competing with experts! If a lot of the kids are from other cultures, then they're more likely to enjoy different vegetables as well, and many may even be vegetarian. Hard to say, since I don't know where they're from. Try this website for international vegetarian recipes. There are some really good ones on this site!

Well, this is a hard one. I have a few great dishes in mind that you could try, but you have said that you're not exactly a great cook, so they might be a little to advanced for you. But I will list them here for you, anyway: 1.Mushroom and pea rosoto, with fried onions on top. 2. Stir fried vegetables with rice. 3. And for this one, go to a resturant that you know serves great vegetarian meals, ask them to make on for you, then pay for it, and bring the dish to that International night of hers. Oh and don't worry, it took me a long time to adjust to the vegetarian life style, too.

Insalata Caprese

sliced roma tomatoes
sliced FRESH mozzarella
chopped fresh basil
good first cold pressed olive oil
balsamic vinegar (optional)

arrange the tomatoes and cheese on a plate, sprinkle the basil over top. drizzle some olive oil and balsamic over everything.

Personally I would make an apple pie. The last time I checked the USA is still part of the UN. Actually I would buy the pie, since I can't bake, but that's just details.

Vegetable Cous Cous is a good one. Kids love it and it's easy to add whatever you have on hand. Plus, it feeds a lot of kids.

You should be able to find all sorts of varieties of cous cous in the store. Make sure you make it with vegetable broth instead of water. It makes a huge difference in taste. Then, add chopped veggies (whatever you like) but chop them small. I like to add peas, carrots, red pepper, mushrooms and garlic. You can also add sliced almonds, or raisins,to get the mediterranean feel. I saute the veggies first, then mix it into the cooked cous cous.

For the meatier version, just add chopped cooked chicken. This is a super fast recipe that our family eats all the time.

We have this event at our school too and it is always fun. I think you could just bring a platter of veggies and a great dip. That is very American and everybody loves this, especially the kids. I find it also very refreshing to see a veggie platter within all those foreign foods. (and I am a foreigner myself!)

Cheese Quesadilla's. Not sure if you can get cheddar but take a tortilla and load it up with cheddar cheese and fold it in half. place it in the oven until it looks crispy and starting to lightly brown on one side then flip it over. KIDS and Adults both love these with salsa.

Try a Thai recipe using tofu (make sure you get the right kind of tofu though). Many thai foods are vegetarian, and they are SO full of flavor I don't know how anyone could not like them!
