In Mexico the most popular oil used in cooking is Lard. In spanish the word is Manteca(man-Tay-cuh). Essentially it is rendered pork fat, it is extremely unhealthy being the worst type of fat in the diet of those that use it. The product is sold in blocks at the grocery store and really makes fried foods taste great. Despite this fact, it is still an artery clogging material that will certainly not be a part of a "healthy" diet

Cooking oil (canola, corn, soy, olive, et cetera) is widely used in Mexico. Manteca is also commonly used, mostly in the country side, but is mostly used for specific dishes as its flavor is not what you want in every single dish.

I guess you asking what kind?? They use the same kind as we do here; canola, or vegetable. My mother in law lives in Mexico and she doesn't use any special kind just whatever is at the grocery store.
