I was thinking more along the lines of dessert, and I wanted to make something light and summery...maybe something lemon flavored? Any suggestions would be great! (make sure you include the recipe or where I can get the recipe....thanks!)

There's a good lemon bar recipe on cookinglight.com. But it's listed under lemon squares I believe. They're really good.

Or you could do a pistachio pie, that's light and fluffy and pretty and good too!

1 Keebler graham crust
1 pkg. pistachio pudding mix
1 can (15 oz.) crushed pineapple, slightly drained
1 tub of Cool Whip

In a bowl, sprinkle the mix over the pineapple and stir. Wait 10 minutes. Fold in the Cool Whip. Dump it all in the crust and refrigerate for 4+ hours. It's awesome!

This is my favourite.

Orange & Lemon Pudding.

2 Eggs.
5 Tablespoons Sugar.
Juice of 1 Orange and 1 Lemon.
11/2 Dessertspoons of Gelatine.
1 Cup Water.

Beat egg yolks, sugar and juice together.
Soften Gelatine in a little cold water, and fill cup to ¾ full with boiling water.
Pour on egg yolks etc.
Lastly add stiffly beaten egg whites.
Beat well before putting into a wet mould.
Put in fridge to set.

Lemon Bars
2 cups all-purpose flour
1/2 cup powdered sugar
1 cup butter, chilled
Topping
4 large eggs
1 1/2 cups sugar
1/4 cup flour
6 tablespoons fresh lemon juice
2 tablespoons freshly grated lemon zest
1 teaspoon baking powder
1/2 teaspoon salt
powdered sugar

For crust, mix together flour, sugar, and butter until crumbly.
Pat into bottom and 1/4-inch up sides of a buttered 9x13 inch baking pan. Bake in a 350°F oven for 15 to 20 minutes, or until lightly browned.
Meanwhile prepare topping. Beat eggs slightly.
In a separate bowl, stir together sugar and flour. Add to eggs. Beat well.
Add lemon juice, peel, baking powder, and salt. Beat until smooth.
Pour over baked crust. Return to oven and bake 25-30 minutes longer, or until just set.
Sprinkle with powdered sugar while hot. Let cool and cut into bars.

Lemon cupcakes w/ vanilla frosting or lemon pineapple pie (1 can crushed pineapples (drained), 1 frozen whipped topping, 3 tbs. lemon juice) Mix together & place in pie crust. Freeze 2 hours or until frozen.

Lemon Cooler Cream Cake

INGREDIENTS
1 (18.25 ounce) package lemon cake mix
1 cup hot water
1 cup cold water
2 (3 ounce) packages lemon flavored gelatin mix
1 cup milk
1 (3.4 ounce) package instant vanilla pudding mix
1 (8 ounce) container frozen whipped topping, thawed

DIRECTIONS
Prepare cake and bake according to package directions in a 9x13 inch baking dish. With a fork, poke holes all over top of cake.

Combine 1 cup hot water and 1 cup cold water with one package of lemon gelatin. Stir until gelatin is dissolved, and pour mixture over cake. Chill in refrigerator until cool.
In large bowl stir together milk, vanilla pudding mix and remaining package of lemon gelatin until powders are dissolved. Fold in whipped topping and spread mixture over cake. Refrigerate until serving

how about apple banana salad. two washington apples,two bananas sliced walnuts sliced pecans miracle whip to coat. refriderate. yummy. Or a citrus punch salad ice gingerale. orange,grapefruit,lemon,lime,also an apple dip, splenda brown sugar and whipped cream chees mixed together.

I would make a melon fruit salad personally..or you can do a berry fruit salad, scoop it into wide mouth wine glasses and top it with whipped cream.
