Salad buffet.Put a large bowl of green salad,then bowls of salad items-tomatoes,pickles,olives,cheeses,boiled eggs,onion rings,and cucumber slices.Now chips and dips(do tortilla and potato chips)Buy large bottle of salsa for dip,then use some sour cream and french onion mix for the other(cheap).Put out some cracker sin a nice basket.Then serve tea and ice water as the drink.Lunch is always lite so this will be the way to go..Enjoy--don't forget the cake..

poach (to simmer in broth) until cooked, let cool and cut into cubes. Add mayo, celery, onions, (like halved green/red grapes), maybe some slivered almonds...Serve as a salad over lettuce or sandwiches...cut with cookie cutters, cute/fun..

Pulled pork/beef sandwiches....
This is easy... buy acouple good size pot roasts (beef/pork) toss in crock pot w/ a couple cans of beef broth/vegatable broth) cook high 8 hrs until pulls apart. Drain- Shred cover with jar of favorite bbq sauce.., Keep warm in crockpot. Serve with chips/ salad

Have some of the local guests bring a dish that serves everyone to divide the costs....

As something that looks fantastic yet is really simple and easy, this will always go down well.
Lavash bread rolls ups. You just put simple ingredients on the inside, roll them up, cut them and then display with the filling showing. Looks great.

1/2 cup mayo
1/2 cup sour cream
1/2 cup asiago cheese, grated
throw it all in the blender, food processor till its smooth, and call it done

you can have a veggie tray, a finger sandwich tray, pickles, cheese, crackers..... the works! Or, you can ask every one to bring something. A lot of people do that... or offer to bring something. For my parents 25th anniversary, we had a gathering at home, and every one brought something. Theres no shame in it. Its nice when people chip in!
