I recently became a vegetarian and I'm having trouble finding food that doesn't include meat. I'm having the same meals every day.

Note: I do not eat seafood. I do eat eggs.

Don't worry, it takes awhile to build up recipes. When I first started I was eating the same thing every week. As time passed and I collected more and more recipes, I went from eating the same thing every week to not seeing the same dish for a month or so.

Good for you! It's pretty easy once you get into the hang of it. I do recommend getting yourself a good vegetarian cookbook, it'll be a life saver. And the internet is great for looking up recipes. But, since you are asking here, I will assume you'd like some specifics.

One of the easy veggie meals I always have as a staple is Veggie CousCous. You can buy cous cous at most grocery stores. I use some vegetable stock and one of those Lipton or Knorr Vegetable recipe/soup mixes. Following the directions on the package it takes maybe ten minutes to make!

I also like to make beans and rice. I just open a can of beans in a pot and add seasonings like chili powder and cumin. With some sauteed garlic and onions it's delicious over any kind of rice!

Those are just my two favs. Go online and look up "vegetarian recipes" and you will find loads more!

I love grilled portobello mushroom caps with a spinach salad and couscous. If you don't own a grill the portobellos can be done in the oven. Drizzle a little olive oil on them and a little pepper (save salt til done cooking so they don't release too much moisture) and bake at 425 for about 10 to 15 min. They are so meaty you'll almost think you're having steak!

One of my favorites that my veggie friend used to make for me:

Drain/strain extra-firm tofu

Boil pasta of your choice

While the pasta is boiling, "scramble" the tofu just like you would eggs, and toss in some pesto sauce. Just before it's done, throw in some fresh tomatoes.

Drain the pasta, and toss it with the "scramble".

Yummy!

Quiche is another good choice...particularly because you can make a fairly large one, and eat the leftovers another night. I don't have a recipe for quiche, but I'm sure you can fine one with a fairly easy internet search.

A friend is a veggie and I cook for her often. Veggie enchiladas are easy, cheap, and you can make a bunch and freeze them. You've probably considered the endless number of pasta options? For lunch, try salads that have beans mixed in.

Cooking Light magazine has veggie options in every issue and you can search their website for vegetarian options (click on "advanced search")

Eat Chinese noodles...rice noodles with vegetables...you can put some tofu in there too. The sauce can be soy sauce or peanut oil, whatever you like.
Peanut butter sandwiches
I love salads..you can make different ones every night look for recipes online.

Also, anything that calls for chicken you can substitute tofu. I substitute portabello mushrooms and/or eggplant for red meat as well. Eat the things you've always eaten, just substitute something else (tofu, veggies, etc) for the meat.

My favorite is fried rice with stir fry veggies on top. I just had it the other day and it was wonderful. You can buy all kinds of seasonings and all different veggies and I am sure that you will love it!
