How can one get that homeland flavour? Things never seem to taste the same when you cook it at home as opposed to when you buy it. Solutions?

I've been trying to nail down just one dish over 7 years, the " pepper soup " and so far no luck.
The key problem lies in the wide variance in recipe and the lack of a common term for the key spices. Not only that, these key spices are inconsistant in quality and appearance, making it very difficult to pin down the exact formula.
Unfortunately, I do not believe there is a solution until the local food industry put some standards in these indigenous ingredients.
