When you remove them from the oven, they are still soft enough to form into that V shape. That is when the fortune is inserted as well.

The cookies are disk-shaped, not folded, when they're baked. Picture a machine that has many, many little round places where the batter is poured in, like a waffle but with no holes. Once the cookies are poured, the cookies, still in their forms, go into an oven where they're baked for a very short time--that's all it takes. When they come out, they're baked, but as long as they're still warm they're very soft. The cookies are then taken off the metal forms and quickly wrapped around the fortune. one When people make fortune cookies, they use a big mixer to stir together flour, sugar, eggs, water, food coloring and vanilla. (The cookie batter) when its been mixed just enough, it's poured out of the mixer and into big buckets.
two The batter is poured into another big machine where it travels down through plastic tubes and is squirted onto little round baking pans. The baking pans move on an conveyer belt into an oven where the batter is baked into cookies.
three Then the fortunes are added. The machine picks a fortune, puts one into each cookie and at the same time, folds the cookie into the right shape.
four The cookies drop into boxes. Once they've cooled, a person puts them into bags, weighs each bag and closes it up tight so the cookies will stay fresh and people can enjoy them.

The cookies are baked just like regular cookies. While they are still warm they are malleable. The fortune is put into it and then the cookie is folded around it. As they cookie cools, it will harden and stay in the shape it was folded into.

Watch the "Food Network" on cable. I've seen how they do it...it's fascinating. The "mom & pop" restaurants use tweezers and probes. After they're cooked, obviously.
