These are some ideas

Fruits

* Fresh cherries
* Maraschino cherries
* Strawberries
* Bananas
* Kiwi slices
* Orange sections
* Mandarin orange sections
* Ruby grapefruit sections
* Pineapple chunks
* Apple slices
* Pear slices
* Fresh coconut chunks
* Melon chunks
* Dried fruits: mango, apricot, banana

Cookies & Cakes

* "Buckeye" centers (Peanut butter filling)
* Coconut balls
* Pound cake squares
* Angel food cake squares
* Prepackaged caramel squares
* Ladyfingers
* Commercial marshmallows
* Homemade marshmallows (to die for)
* Cheesecake squares
* Brownie squares
* Fig Newtons
* Meringue cookies

Crackers and Breads

* Graham crackers
* Pretzels and pretzel sticks
* French baguette pieces
* Toasted brioche squares
* Kettle-style potato chips

Have you looked on QVC? They sell ones for a lot cheaper than you can rent and you could do several different ones. You can also do caramel, white chocolate, dark chocolate, milk chocolate, or even cheese sauce for those that can't have sweets. Just an idea.

Then if you wanted to recoop your money afterwards you could sell them or just keep them or give them away.

Marshmallows, biscotti, Oreos or Chips Ahoy, slices of banana, pretzel rods, raspberries, cubes of poundcake or angelfood cake.

I would not use oranges, kiwis, or pineapple - they're so juicy, the chocolate won't stick.

peppermint sticks- bob's are good because they are really soft (also, they're their own handle)
home-made FLAVORED marshmallows
exotic fruit-passionfruit, star fruit, etc.

a good idea might be to do a dipping station- bowls of coconut, nuts, broken up candies, cinnamon, etc- so that when people have put chocolate on their candy/fruit, they can add a topping, as well. that could eliminate having to find a million things to dip, by using creative things to dip them IN!

even as simple as sprinkles in your wedding colors, colored sugar, etc.

oh, fun! i'm jealous now!

Pretzels, apple slices, butter cookies or peanut butter cookies. Marshmallows are the most delicious though!
