What a wonderful idea!!! Please keep in mind any dietary constraints your parents might be having at this point in their lives as you plan the menu for them. Here are some ideas:
1. If your parents drink alcohol and have favorite beverages, make them or have the ingrediants on hand for them to make themselves.
2. Make sure you have their favorite romantic music to add to the ambience of the evening. Pull out your best linens, favorite candles, put some fresh flowers on the table, and buy your mom a corsage. If your dad's a pipe or cigar smoker (heaven forbid!) have some of his favorite tobacco or smokes on hand for him as well. This is not the time to moralize about the benefits of stopping smoking!
3. A nice dinner might consist of some of their favorite foods, but those that they don't have very often such as:
Jumbo shrimp and filet mignon
Lobster tail and filet mignon
Chicken Pasta Alfredo (cheesy and rich)
Steak and sauteed mushrooms
You get the idea!
4. Side dishes should include a vegetable and starch, unless your main dish is starch based.
Here are some menu ideas:
1. Chicken breasts stuffed with chopped artichoke hearts, goat cheese, bread crumbs, parsley and topped with a white wine reduction. Served with wild rice pilaf and fresh green beans.
2. Ribeye steaks rubbed with kosher salt, cumin, chili powder, fresh ground pepper, and garlic. Serve with sauteed mushrooms, mashed potatoes with sour cream, and fresh green beans.
3. Chicken and asparagas crepes made with a bechemel wine sauce. Serve with hot fresh bread and sweet butter and a baby lettuce salad with shaved parmesan, beets, and a dijon vinegrette.
4. Cracked crab and fresh prawn platter with cocktail sauce and drawn butter. Serve with romaine spears and a blue cheese dressing, hot sour dough bread and sweet butter.
5. Pork Roast rubbed with kosher salt, fresh ground pepper, and rubbed sage. Serve with a white wine reduction (add capers and dijon mustard) along with mashed sweet potatos, and baby peas with pearl onions.
6. Spaghetti and meatballs: make your favorite marinara and let it simmer all day. Serve with meatballs (stuffed with mozarella cheese), chopped green salad with Italian dressing, hot french rolls and sweet butter.
7. Spinach salad with chunks of platter bacon, feta cheese, candied walnuts, and french dressing. Serve with warm Rosemary Potato Bread with a cheese platter of smoked gouda, havarti, fontina, and Spanish Manchenga
The list goes on. For dessert?
1. Ice cream with kahlua and chocolate shavings
2. Angel food cake with vanilla ice cream, chocolate sauce and nuts
3. Fresh fruit with sour cream and brown sugar to dip in.
4. Chocolate mousse
5. Lemoncello creme brulee
6. Coconut layer cake with chocolate sauce
7. Ice cream pie (chocolate cookie crust, dulce la leche ice cream on one layer, chocolate fudge on the second, topped with whipped cream, chocolate shavings and frozen)
8. Fresh strawberry shortcake
Bon Appetit!

What about making a nice big lasagna? There are so many different recipes now that can appeal to just about anyone! And how about a big spinach salad? And some bread-sticks! You could go to your local bakery and pick up a tira mi su cake, or some cannolis, and buy some wine! Most employees at liquor stores are happy to suggest some good wines to pair with whatever your cooking. Or if you're lucky enough to live near a Trader Joe's, check out some options there. I'll include a link about table settings...
Good Luck!

"Chicken In Wine Sauce" (Sorry...don't have exact measurements...I usually cook by "eying" it & not from recipe) Take some boneless chicken breasts and cut each into 4 or 5 pieces and season with salt/pepper. Brown pieces in 2 or 3 table spoons of hot oil. "Give piece a chance" to brown on both sides, than remove from pan/skillet & place in large casserole dish. To the chicken drippings left in pan stir in 2 cans cream of chicken soup (stir until fairly smooooth); stir in 2 cups Sauternes wine (again, you want to stir 'till sauce is smooth & there are no lumps of cream of chicken.) Add some mushrooms...obviously, fresh, cut mushrooms sauteed in a little butter is the best choice...but for a quick fix & if you don't want to spend the time, then drained canned mushrooms will work fine (a couple of small cans should do). Bring sauce to a gentle boil then pour over the chicken. Bake in preheated 350 degree oven for about 45 minutes. Serve over rice or pasta. For dessert, I would recommend Tiramisu.(Too hard to make...but you can always pick some up at a local restaurant/diner. Good Luck! I'm sure whatever you & your brother decide to make will be a treat for your parents. Pass The Peace ~~~> ☮ ((ºJº))
