very true what everyone has said..
If it is not breaded, floured, salted, fried, and smothered in gravy, you can bet it's not real southern food!
Think fried green tomatoes..cheese grits with tons of butter..country fried steak with cream gravy..fried peach pies..7 layer salad with lots of bacon chips..great now I am hungry!

There is no "always" in any stereotype. But many stereotypes have an element of truth to them. So while southern or country cooking (NOT the same, btw) may well be pretty fatty, and the people who eat it may be fat, not all is fatty and not all eaters are fat.

All jokes aside, YES. Growing up we were punishe if we threw away bacon fat. It really is a culinary art form, created by people who were too poor to throw anything away. I even have a t-shirt that says " I Love Pork Fat". Hey, I live in Los Angeles and have fatback in the freezer.

Southern cooking takes it's roots in the art of using different types of fat (ie. lard, shortening, salt fat, bacon dripping...etc.) in amazing ways. It's origin lies in a multi-cultured background. They have perfected the art. Fat means flavor. If you are worried about the fat content of your cuisine. Southern may not be the way to go, But for flavors sake...Well...It's packed with it.

Really yes most food is fried with loads of gravy and breads....but you can always cut corners if you want to reduce the calories....you can bake the chicken in the bread crumbs for example....but the real way is oh sooo gooood!!!
