Depending on fitness, 100m sprints will take you 12-20 seconds, an anaerobic workout. Your heart rate will fly up the last 8-12 seconds. If unfit, actually almost as bad as smoking from a cardiac perspective, as you'll pump a lot carbon dioxide through the heart.
Walking in beach sand on beach sand, depending on speed, will be a light aerobic to moderate aerobic workout. Done for 30-60 minutes, great for your heart. Long term conditioning, and may build some collaterals.
If not used to sprinting, poor running form may also cause other injuries besides the normal issues of joint impact.
For the heart, one starts easy, and works up with duration and difficulty, in that order.

Walking in the sand is better for your heart because it is continuous, so it would be considered an aerobic workout. Running 100 meter sprints is an on/off workout, so it is more of an anaerobic workout. Sprints work more for the skeletal muscles while the walking in the sand is more a workout for the heart.

Quick sprints help boost you metabolism and keep your heart rate up. By keeping you heart rate up during exercise you are allowed to burn more. Running on the beach is good because the sand takes a lot of the impact away from your knees, a high school track is also good. During rest your heart beats slower but is able to pump more blood because during work outs your heart will form new arteries through your body. Thus making your heart pump more efficient.
Start by doing 50 yd. quick sprints and resting for 2 minutes. Work your way up to 10 or so. It's a good idea to do this no more than 2 times per week. You need to give your body time to rest and repair itself.

Walking on the beach would be healthier. Running is going to put more strain on the joints. Walking on sand would work out your leg muscles and give you a good cardio workout with minimal chance of injury.
