There are hundreds of different kinds.
The popular misconception is that all Sushi contains raw fish. This is a mistake America made in translation 30 years ago. The popular Japanese raw fish dish is called Sashimi. I guess lots of people got the words mixed up.
If you are starting out, try the Maki rolls first.
If you can't handle the seaweed, there's bad news ahead, the others are even more fishy.

I love fish. I love Sashimi. I'm not so big on Squid and Octopus.

Its really easy. Sushi is actually the rice.To make rolls first the rice is cooked and then a vinegar dressing is added. You take the nori seaweed put a layer of rice on it add what ever filling you are going to use and roll it all up.
I've made sushi before but it's hard to explain.
Perfect Sushi Rice
"Here is my recipe for the perfect sushi rice. You can eat this alone or roll into your favorite sushi roll with ingredients of choice. I use strips of carrots, cucumbers and slices of avocado. You can adjust the amount of vinegar in this recipe to suit your taste."
INGREDIENTS:
2 cups uncooked glutinous
white rice (sushi rice)
3 cups water
1/2 cup rice vinegar 1 tablespoon vegetable oil
1/4 cup white sugar
1 teaspoon salt
DIRECTIONS:
1. Rinse the rice in a strainer or colander until the water runs clear. Combine with water in a medium saucepan. Bring to a boil, then reduce the heat to low, cover and cook for 20 minutes. Rice should be tender and water should be absorbed. Cool until cool enough to handle.
2. In a small saucepan, combine the rice vinegar, oil, sugar and salt. Cook over medium heat until the sugar dissolves. Cool, then stir into the cooked rice. When you pour this in to the rice it will seem very wet. Keep stirring and the rice will dry as it cools.

Sushi itself is prepared in three different fashions; Maki, Nigiri, and Sashimi. Each one is made a little different, but they usually have vinegar rice that accompanies most of them. Maki are generally rolls that are made by laying a piece of nori (seaweed) flat and than by smoothing over the rice on top. Pieces of fish, vegatables, or whatever are than placed on the very top. A sushi mat is than used to roll it like a large cigar. Finally it is usually cut into six pieces. Nigiri (my favorite) is the raw fish placed on top of a chunk of the sushi rice. There are some different variations like a battleship roll that incorporate nori for added support for sushi like uni. It keeps the uni from sliding off. Sashimi is just raw pieces of fish by themselves. They can be served on a bed of sushi rice and this is called Chirashi.

If you mean the popular california roll. Rice wine vinegar with rice. put it on some seaweed put in crab, avacado and cucumber. you use this like wooden mat-like thing. and roll it up. I can make it but its hard to explain what to use . good luck
