When olive oil and unsaturated fats heat up they lose their healthy factor. Omega 3 degrades in heat. Women especially should avoid fried french fries - definitely do not eat the processed ones that you get at fast food places! It is best to make your own home fries in the oven and they actually turn out tasty. Otherwise, eat fried foods in moderation and know that you will get fat if you eat too much and nothing deep fried is good for you.

If you're frying your food at the correct temperature and for the correct amount of time....you shouldn't be consuming much more fat than what is in the actual thing being fried.
If the oil is hot enough it actually sears and seals the outside of the food therefore sealing off all entry and exit points for oil or other juices. This can be seen if you've ever bitten into a fried mushroom and the juice from inside squirts all over.
Even though there is still a minimal amount of residual fat in the breading, if done properly (unlike in many fast food restaurants) you can easily fry healthily.

Food, in general, is fattening if you eat too much of it. Fried food, by virtue of its cooking method, simply contains more fat than it would if you had baked it or broiled it. There's a method for eating ANY food without getting fat--now say it with me:
M-O-D-E-R-A-T-I-O-N! That's right, folks! Simply pay attention to your portions, slow down on the eating and actually enjoy what you put in your mouth and voila! You'll eat less, enjoy it more, and you won't have to worry so much about what it'll do to your hips. Amazing, ain't it?

Some fats are worse for you than others, but no matter which you use you are still saturating your food in fat. There is no way for it to be non-fattening!
I've heard that coconut oil is the healthiest for frying, but I can't confirm that...

Most indeed are, but there is a simple way to allieviate the stress, just eat less of it, eat one piece of fried chicken and skip dessert or you could of course always exercise

I'VE COOKED IN RESTAURANTS FOR 36 YEARS, FRIED FOOD IS FRIED FOOD......YOUR FOOD LOOSES FOOD VALUE, AND RETAINS GREASE. dOESN'T MATTER WHAT OIL YOU USE, IT IS STILL IN THE FOOD, AND IF NOT DRAINED PROPERLY, IT WILL STAY UNDER THE SKIN OF THE CHICKEN, OR BREADING, ETC., AND YOU CAN GET BURNED WHEN YOU BITE INTO IT.
