How do you say picky in Spanish, like someone who is very selective. Is there more than one word for it in Spanish?

It all depends how you are going to use the word picky, referring to what?
"Exigente" is the closest, I think, meaning you want perfection.
Quisquilloso, is someone who is meticulous.
There is really no such word as "picky" in Spanish.

the word that aproaches the most would be "caprichoso (a)" or "exigente", both refering to a person that's very selective
very selective --> muy selectivo (a)
"quisquilloso(a)" IS NOT a good translation since it means -too delicate for the common behaviour- or -person that get's offended easily and oftenly by small details"
Another word that fits the translation is "exquisito (a)", but unfortunately it's a common latinamerican SLANG, so it won't help when using it with spanish from spain.
I'm a native spanish speaker so i know what I'm talking about =)

there is no literal translation for the word picky just words that can be used with other meanings. so your best bet would be selectivo/a as in selective with the kind of food you eat. there are other slang words ever spanish speaking country has but as far as being understood by all native speakers you should use the word selective.
