#4 to #7.5 from a shotgun. No need to go larger than #4. For non-hunters that may read this: Shotgun pellet size increases as the number designation goes down. Tight chokes are the best. Aim at the head. Archery equipment is also often used for turkeys. Broadheads would be used in that case. Aim at the body. That is what I remember hearing about using arrows. I have never hunted turkey that way, so If someone disagrees, feel free to correct me (on the archery). I am assuming your question was strictly on which firearm to use and not hunting tecniques. Turkey hunting techniques would be a whole other series of questions.
A word of caution as a hunter education instructor:
Rifles as one post admitting to using in the past are not legal in some states for taking turkey. Always make sure to check the game laws in your state before doing any hunting, fishing, etc.

Whatever shotgun you are comfortable with 12ga, 16ga, 20,ga, 410 whatever. Use #4 shot is best aim at the head at less than 60 yards. Whatever range you are comfortable with. You can get your turkey hunting gear at:

AS stated above the best way is with a shotgun with #4 or#5 shot. all though I've shot them with everything from a .22 to a deer rifle. Just make sure you aim for the head/neck area.

Shotgun, preferably 12 gauge, best to use eitehr 3" or 3.5" magnum shells loaded with shot size #4 or possibly a little bigger.
