Waffles
You can keep the batter, covered, in the fridge for up to a week. Just be sure to whisk well before using again. You may also use whole wheat flour for this recipe
2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
1 Tbs white sugar
4 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla extract
1 Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.
2 Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.
Servings: 6
Banana Pancakes
Crowd pleasing banana pancakes made from scratch. A fun twist on ordinary pancakes
1 cup all-purpose flour
1 Tbs white sugar
2 tsp baking powder
1/4 tsp salt
1 egg, beaten
1 cup milk
2 Tbs vegetable oil
2 ripe bananas, mashed
1 Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
2 Stir flour mixture into banana mixture; batter will be slightly lumpy.
3 Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
Servings: 6
Breakfast Sausage Casserole
1 lb ground pork sausage
1 tsp mustard powder
1/2 tsp salt
4 eggs, beaten
2 cups milk
6 slices white bread, toasted and cut into cubes
8 oz mild Cheddar cheese, shredded
1 Crumble sausage into a medium skillet. Cook over medium heat until evenly brown; drain.
2 In a medium bowl, mix together mustard powder, salt, eggs and milk. Add the sausage, bread cubes, and cheese, and stir to coat evenly. Pour into a greased 9x13 inch baking dish. Cover, and chill in the refrigerator for 8 hours, or overnight.
3 Preheat oven to 350 degrees F (175 degrees C).
4 Cover, and bake 45 to 60 minutes. Uncover, and reduce temperature to 325 degrees F (165 degrees C). Bake for an additional 30 minutes, or until set.
Servings: 8

Cooking time: 1 hour and 30 minutes
Ready in: 9 hours and 50 minutes
Zippy Egg Casserole
1 lb pork sausage
1 (5.5 ounce) package seasoned croutons
1 1/2 cups shredded Cheddar cheese
1 cup shredded Swiss cheese
1 cup shredded pepperjack cheese
8 eggs
1 pint half-and-half cream
1 1/2 cups milk
1 1/2 tsp dry mustard
1 Tbs minced onion
salt and pepper to taste
1 Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
2 In a lightly greased 9x13 inch baking dish, arrange the croutons in a single layer. Layer with Cheddar cheese, Swiss cheese, and pepperjack cheese. Top with the cooked sausage.
3 In a large bowl, beat together the eggs, half-and-half, milk, mustard, onion, salt, and pepper. Pour into the dish over the sausage. Cover, and refrigerate overnight.
4 The next morning, bake in an oven preheated to 350°F for 45 to 60 minutes. Let sit for 20 minutes before serving.

Apple Raisin French Toast Strata
A simple but elegant way to make breakfast fast. Put together the night before, and bake while you're in the shower. Serve with lots of extra maple syrup! You may also add extra raisins if you wish.
1 (1 pound) loaf cinnamon raisin bread, cubed
1 (8 ounce) package cream cheese, diced
1 cup diced peeled apples
8 eggs
2 1/2 cups half-and-half cream
6 Tbs butter, melted
1/4 cup maple syrup
1 Coat a 9x13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with the apples. If you like extra raisins, add them now. Top with remaining bread.
2 In a large bowl, beat the eggs with the cream, butter, and maple syrup. Pour over the bread mixture. Cover with plastic wrap, and press down so that all bread pieces are soaked. Refrigerate at least 2 hours.
3 Preheat oven to 325 degrees F (165 degrees C).
4 Bake 45 minutes in the preheated oven. Let stand for 10 minutes before serving.

I didn't think I'd like this, but I really do enjoy it. I will even make it for a snack.
1/2 cup Balkan style all natural plain yogurt
1/3 cup grape nuts
1 cup strawberries, sliced
honey drizzled to taste
I mix everything together. It looks like a big mess, but it tastes delicious.

Well, I really like bagels and my friend came up with a slightly different way to have it with cream cheese. You have some cream cheese and maple syrup together, heat it up in the microwave for 10 seconds and stir it up. Just put however much syrup you want. Just whatever your taste buds are like. Hope this helps.
