Any good recipes for mexican meatloaf? I remember I used to have a betty crocker cookbook that had a great one but I can't find it anymore.

I'm giving you a link to a mexican Meatloaf(source) that sounds good =) and here is a Tex-Mex Recipe that I am going to try too.

Tex-Mex Meatloaf

INGREDIENTS:
1 onion, finely chopped
2 cloves garlic, minced
2 Tbsp. minced jalapeno pepper
1 Tbsp. olive oil
1 egg
1/4 cup water
1 Tbsp. chili powder
1 cup refried beans
1/2 tsp. salt
1/8 tsp. cayenne pepper
1-1/2 lbs. lean ground beef
1/2 lb. ground pork
1/2 cup shredded Cheddar cheese

PREPARATION:
Preheat oven to 350 degrees. In heavy skillet, saute onion, garlic, and jalapeno in olive oil until crisp tender, about 5 minutes.
In large bowl, combine egg, water, chili powder, salt, refried beans, and sauteed vegetables.

Mix well until thoroughly combined. Add ground beef and pork and mix gently but thoroughly with hands. Pat mixture into a loaf shape on a broiling pan with slits and an under pan to catch grease.

Bake at 350 degrees for 55-60 minutes, until internal temperatures registers 160 degrees F. Sprinkle meatloaf with cheese and bake 5 minutes more until cheese melts. Turn onto serving platter, cover, and let stand 15 minutes before slicing. 6

This is the best Mexican Meatloaf Ever!
1) Take some ground beef
2) Chopped onions
3) Chopped Bell Peppers
4) Salt & Pepper (other seasoning of your choice)
5) 2 Eggs
6) Mix all ingredients in a bowl
7) Mold meatloaf and place in an oven safe dish
8) Bake at 350 Degrees for 1 hr
9) Cover in mole'
10) Place back in oven for 15 minutes
11) Take out of oven
12) Wrap in extra extra extra large tortilla with cheese, sour cream, beans, and rice.
13) Serve!

Ingredients:
2 pounds lean ground beef
1 can (8-ounce size) tomato sauce
1 cup dry bread crumbs
1 package taco seasoning mix
1/3 cup chopped green bell pepper
1/3 cup chopped onion
1 large egg
2 cups shredded cheddar cheese
1/2 cup sour cream
1/4 pound cheddar cheese, sliced

Directions:

Preheat oven to 375F.

In a large bowl combine ground beef, tomato sauce, dry bread crumbs, taco seasoning mix, green bell pepper, onion and egg; mix thoroughly and set aside.

In a medium bowl combine cheddar cheese and sour cream. Place half the meat mixture in loaf pan. Make a deep well the length of loaf; place the cheese mixture in the well, then place the remaining meat mixture on top. Bake for 1 1/2 to 1 3/4 hours.

Pour off the drippings. Top the meatloaf with sliced cheddar cheese, overlapping. Let stand for 8 to 10 minutes.

INGREDIENTS
2 pounds lean ground beef
1 (1.25 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
4 (8 inch) flour tortillas
3/4 cup fresh salsa
1/2 cup shredded Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix thoroughly the ground beef and taco seasoning; set aside. In a medium saucepan, heat the refried beans over medium low heat until they are completely heated through.
Place the ground beef mixture on a large piece of foil. Press the mixture into an approximately 1 inch thick square shape. Spread the refried beans evenly over the top of the flattened beef. Layer the flour tortillas on top of the refried beans, trimming the edges to fit the square. Layer tortillas with salsa and Cheddar cheese, staying 1/2 to 1 inch away from edges of the square.
Gently roll the layered beef into a Swiss roll shape, pressing and compacting the loaf as you go. Pinch and seal the edges. Wrap in the foil and seal.
Bake in preheated oven 40 to 45 minutes, or until no longer pink in the center. Cut loaf in half to test for doneness, if necessary.

Mexican Meatloaf:
Ingredients:
1 pound ground beef
1 cup dried breadcrumbs
1 cup each salsa and chopped onions
1 large egg
1/2 cup shredded Cheddar cheese
1 teaspoon garlic powder


Directions:

Heat oven to 350 degrees F. Mix all ingredients in a large bowl until well blended.

In shallow baking dish, shape mixture into an 8 x 4" loaf. Bake 1 hour or until cooked through.

This recipe for Easy Mexican Meat Loaf serves/makes 6

Mexican FIESTA meatloaf
Ingredients:
1 cup tortilla chips, crushed and divided
1/4 cup milk
1 1/2 pound meatloaf mix (beef and pork)
1 egg
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon chili powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1 tablespoon Worcestershire sauce
1 cup salsa
1/2 cup cheddar Jack cheese


Directions:

Preheat oven to 375 F.

In small bowl, soak 1/2 the chips in milk, until soft. Mix meat with remaining ingredients, except salsa.

Shape into loaf. Place in 9- by 5-inch loaf pan. Pour salsa over top. Sprinkle remaining crushed chips crumbs over salsa.

Bake for 45 minutes to one hour. Remove to serving platter and top with shredded cheese

The best recipe I've come across for a mexican meat loaf actually involves chicken instead of beef (I suppose you could substitute beef or turkey or whatever meat you wish). Everyone I've tried it on has loved it.

1 lb of Ground chicken (or beef or turkey or whatever)
1 1/2 cups of bread crumbs
3 tbs of Salsa
2 tbs of ranch dressing (or sour cream)
1 package of taco spices.
2 eggs

Mix together in a bowl, then pack into a 4x8 bread pan. Cook at 350 for an hour. Then top with some shredded cheddar cheese and serve with sour cream on the side. Very very good meatloaf and you can easily make it as spicy or as mild as you like. I like to substitute taco sauce for the salsa myself.

Take your basic meatloaf recipe and add some chili peppers and some corn either creamed or regular. fresh first then frozen then canned if necessary. it will taste really good.
