this is the best recipe ever...
INGREDIENTS:
1/2 cup sweet butter
2 garlic cloves, minced
2 cups heavy cream
1/4 teaspoon white pepper
1/2 cup grated parmesan cheese
3/4 cup mozzarella cheese
1 (12 ounce) box angel hair pasta
PROCEDURE:
Melt butter in medium saucepan over medium/low heat.
Add the garlic, cream, white pepper and bring mixture to a simmer.
Stir often.
Add the parmesian cheese and simmer sauce for 8-10 minutes or until sauce has thickened and is smooth.
When sauce has thickend add the mozzarella cheese and stir until smooth. STIR FREQUENTLY
While the sauce cooks, boil noodles for 3-5 minutes.
Plate pasta on serving plates and spoon sauce over pasta.
After makling this recipe for a couple months now, I have made a couple of tweaks in the recipe to create the PERFECT alfredo sauce. Firstly always use shredded parmesan, this may be harder to melt, so when I first put the cheese in, I take the heat up to a boil, then quickly reduce it so the cheese doesn't burn. Also I do not use the entire stick of butter, I take off about one tblsp. If not the sauce will not be thick enough. Last but not least, I add one tblsp. of sour cream. I also suggest using oragnic half and half as it has much more flavor. In my opinion this is the best alfredo sauce I've ever had.

Olive Garden Alfredo Sauce Recipe
Ready in: < 30 minutes
Difficulty: 3 (1=easiest :: hardest=5)
Serves/Makes: 4
Ingredients:
1 pint heavy cream
1/2 cup butter
2 tablespoons cream cheese
3/4 cup parmesan cheese
1 teaspoon garlic powder
Directions:
Let the sauce simmer as long as you can! Please note the cream cheese is optional, we add it to aid in thickening the sauce. Olive Garden does not use cream cheese.
In a saucepan combine butter, heavy cream, and cream cheese.
Simmer this until all is melted, and mixed well. Add the Parmesan cheese and Garlic powder.
Simmer this for 15- 20 minutes on low.
You may wish to season with a little salt and pepper.
I have done this with half and half, but we prefer the heavy cream. I wouldn't try it with plain milk.

It's not a true alfredo, since it doesn't use cream, but here's my recipe.
1/2 cup Margarine
1/4 cup Flour
1/2 tsp salt
1/4 tsp pepper
1/8 - 1/4 tsp Garlic powder
2 cups milk
1 cup grated parmesan.
In medium saucepan melt margarine.
Blend in flour, salt, pepper and garlic powder.
Cook until bubbly and smooth
Gradually add milk. Then add Parmesan.
Heat until it boils and thickens, stirring constantly.
It tastes good, and you can change the amount of flour to get the thickness you want.
Good luck.

Heavy whipping cream, parmesan (or other like Gorgonzola) cheese, garlic ... first you 'chop' and 'saute' the garlic in a bit of Extra Virgin Olive Oil until it's 'translucent' ... then you add the cream and let it 'simmer' until it starts to thicken just a bit ... add the cheese, which will continue the 'thickening' process ... use these 'basic' measurements for one times the number of people you need to serve - 1 clove of garlic (that is one piece from a 'bulb') to 1/2 cup heavy whipping cream and 1/4 cup parmesan or other cheese (Gorgonzola has a 'heavier' flavor, so you may use less, but TASTE and adjust until it 'tastes good' to you).

1. Soak Alfredo in olive oil prior to cooking. He tastes better freshly-drown. You might want to beat him with a meat mallet first.
2. Sever Alfredo's limbs & strain him through a nice sieve or cheesecloth. Don't let that blood coagulate!
3. Add in your saute'd garlic & onions.
4. Throw on your linquine , garnish with Basil leaves & bon A'ppetit!
