I thought that egg yolks were yellow and the egg whites were white. It would be are if you are making it plural.

It would be "are". When in doubt, cut down to the basic words in the sentence. To what are you referring, with your "are"?? The yolks. Yes, they are EGG yolks, but the bottom line is that it is the yolks that you are referring to.
Would you say "the yolks is white"?? Nope. You sould say "the yolks are white".

The egg yokes are white, is not a true answer.
