i just want to hit the bag and whatnot and just improve my overall punching and striking (legs elbows etc) nothing like I'm training to be a fighter or anything, just to see and mimic a bit.

Fast twitch muscles are speed muscles-slow twitch muscles (shoulders) are power muscles. If your punches and strikes are slow then work on developing your speed and keep those shoulders relaxed. Double jabs, double strikes, explosive push ups, jabbing from the relaxed position (with your arm just hanging and lifting it up to jab and jabbing) will help that. Its like baseball-if you are tight when you are up to bat at the plate you can not swing the bat as quickly and accurately as otherwise. Also proper footwork is important. I was a good fighter but I would have been even better if I had taken that dance class my mom wanted me to take in second grade. The fighters I train work on footwork as much as anything else.
If your problem is power-then light to medium weights, high reps for shoulders, deltoids, biceps and triceps can help build those muscles. Some types of pushups can also help build these muscle groups as well.
