I am attending a party with a bunch of meat-eaters. I want to bring a vegetarian appetizer-type dish that the other party goers will not be afraid of trying. It also has to be easily portable and outdoor-friendly. Unfortunately, none of my recipes fit all of these qualifications. Any suggestions?

Hummus or guacamole and veggies is a good one. Most people like that. You can also try a curried potato salad. Rice stuffed tomatoes and peppers are also really yummy, and travel and keep well.

Vegetable/tofu kebabs

Slices of potatoes, with rosemary, seasoned and baked in the oven that people can just eat with their fingers

Maybe vegetarian/vegan cheese-filled spuds with fake bacon mixed in? Use small potatoes and cook them until crispy so people can pick them up individually with their hands.

Make some veggie sausage rolls, with veggie sausages and vegetarian-friendly puff pastry.

Little vegetarian/vegan pizzas- Buy a large ready-made pizza base and use a cookie cutter to cut out circles, cover with a little tomato & basil pasta sauce and other toppings, top with a little olive oil and oregano and grill until starting to crisp up.

* when buying pasta sauces, check to make sure veggie as some add anchovies, and make sure any pizza bases etc are veggie safe.

I usually make desserts from Sarah Kramer's cookbooks, but she has an awesome mock chopped liver recipe I adapted: 8 oz mushrooms, chopped 1 medium onion, chopped 3/4 cup walnuts seasonings to taste Saute mushrooms and onion until soft. Place in blender wtih walnuts and seasonings (I always use garlic) and blend until smooth. Let sit several hours before serving with crackers.

Here is what I call my Vegetarian Frittata, the only thing I am unsure of is if you eat eggs.

Frittata. Vegetarian.
Thaw or boil 1lb frozen veges, and allow to drain and cool.
Place in a range top to oven dish. Must be shallow.
Whisk together 6 medium eggs and pour over veges and cook on med low heat until the eggs are beginning to set and the transfer to oven and place under a medium hot grill, until the eggs are set and the brown.


As you can see it is dead easy and you could adapt it yourself.

I made some 'curry puff' things recently that were a square of puff pastry, with a dollop of a mixture I made with potato, sweet potato, diced carrot, coconut cream, and curry paste, simmered until thick. Then cool the mix, spoon onto the pastry, fold in half then cook until the pastry is puffy and golden. You can use any filling.

The best thing I have ever served is spinach balls. About the size of a small meatball. They are made of spinach, eggs, bread crumbs, garlic and whatever else you like. Roll them up and place them on a greased tray to cook. Done when golden brown. They can also be made ahead of time and place on a tray to be frozen. Once they are frozen, you can bag them.

well:

~the usual veggie platter (baby carrots, broccoli, caulifower, cucumbers, the little grape tomatoes, various olives etc) with different dips (ranch, italian, etc)
~Chips and salsa
~seasoned and fried tofu
~Fresh peas (the ones still in a pod)
~lettuce wraps (use cabbage and lettuce, big leaves and stuff them with your fave stir fried veggies)
~make a platter with fruits sliced up (mangos strawberries, peaches, cherries, etc and vanilla wafers with some whipped cream for dipping)

~if youre feelin adventurous grill peach, nectarine and plum slices... sprinkled with cinamon and nutmeg

STUFF CHERRY TOMATOS,WITH A BLACK OLIVE TAPANADE, 1 CAN OF PITLESS BLACK OLIVES DRIZZLE OLIVE OIL,1 SCALLION, A LITTLE SALT AND PEPPER BUT IN FOOD PROCESSOR MIXED BUT NOT FINE , STUFF THE CHERRY TOMATOS, OR BRING 2 TYPES OF CHEESE, 1 HARD AND 1 SOFT, BRING SOME DIFFRENT TYPES OF CRACKERS,AND OF COURSE PUT ALSO IN PLATTER SOME GRAPES,SOME APPLES. As a carnivore, I always appreciate stuffed mushroom caps, potato skins, cole slaw, salads, ambrosia (oranges, coconut, bananas) and things like that.
