Mashed potato! With herbs and cream cheese like Philadephia blended in! with loads of butter! YUM!

I like this ...but I don't put the kitchen bouquet or the picquante sauce or the cashews in it..

VEGAN CHILI RECIPE:

Ingredients:
olive oil
2 large yellow onions, diced
2 cloves garlic, minced
1 red pepper, diced fairly large
1 green pepper, diced fairly large
2 (28-oz.) cans crushed tomatoes
1 tablespoon cumin
1/2 cup ground carrots
1/2 cup ground celery
5 mushrooms cut into quarters
1 package frozen corn
2 cans black beans (or any other kind of beans you like - chickpeas work well, too)
1 1/2 cup picante sauce
1 t. Kitchen Bouquet, browning sauce
salt to taste
grated cheddar, if desired
cashew nuts, if desired

Directions:

Saute onions in the olive oil. Add garlic. After onion and garlic are golden brown, add cumin, cayenne, and any other spices. Cook for a few minutes longer.

Add the diced peppers and saute for a few minutes. Combine the crushed tomatoes, carrots, celery, mushrooms, corn, beans, browning sauce, and picante sauce into the crock pot; add the onion mixture. Cook on low about 10 hours.

Serve with grated cheddar and cashew nuts, if desired.

SPICED CHICKPEAS

A fragrant stew to serve on brown rice with bowls of coconut and chopped nuts and a green salad.

50ml sunflower oil
2 onions, chopped
3 cloves garlic, crushed
2 ml each ground cumin, turmeric cinnamon and ginger
5ml ground coriander
2 sticks table celery, chopped
1 green pepper, seeded and diced
750ml cooked chickpeas, drained
125ml chopped parsley
1 x 400g can tomatoes, chopped, plus juice
2 bay leaves
250ml water or vegetable stock
5ml sea salt or 10ml vegetable salt
5ml sugar

Heat oil in a large saucepan
Add onions, garlic, spices, celery and green pepper
Cover and cook over low heat until the onions are soft.
Add remaining ingredients, bring to the boil, then cover and simmer on low heat for about 30 minutes, stirring occasionally.
Add a little water if necessary, for a good sauce.
Check seasoning and serve

It's called creamy tofu spinach rice casserole or something like that, but I usually make it with pasta and sometimes broccoli instead of spinach. You just saute some garlic, onions, and mushrooms in olive oil. Add some flour til it's pasty, then add soy milk. Cook it til it's reduced, then add a bunch of nutritional yeast. Mix it with chopped tofu, steamed broccoli or wilted spinach and either cooked pasta or rice. Bake it in the oven for about 25 mins. Really yummy and comforting in the winter.

I also like vegan mac n cheese which is actually really similar to this recipe and veggie burritos with lots of guacamole. And ABJ's--Almond butter and jam sandwiches. And vegan mint chocolate chip ice cream--which I can't find in London. Argh! I'm getting hungry....

Another thing I like to do when in the mood for comfort foods is make a big meal of my fave holiday "side" dishes... Candied yams (no marshmallows of course, but TONS of brown sugar) mashed potatoes with mushroom gravy, and bread stuffing made with no-chicken broth and lots of celery and onions. Funny, but these were the only things I ate at the holiday meals even when I wasn't a vegetarian!! Yummy, I think it's time to go make dinner!

please dont get mad at me. i am not a vegetarian, but do know some vegan recipes.
Vegan Comfort Foods

Bean Stroganoff

1 cup soymilk
2 1/3 cups of oil
1 tablespoon sugar
1 1/2 teaspoon salt
5 tablespoons vinegar
3/4 teaspoon garlic powder
1 tablespoon soy sauce
2 cups cooked soybeans
1 cup cooked rice

In a blender, pour cold soymilk and slowly add the oil while blending at high speed. Continue to blend until the mixture becomes very thick. On a low speed, add in the sugar, salt, and 2 tablespoons of the vinegar. Measure out 1 cup of the resulting mix, putting the remainder in reserve in the refrigerator.

To the one cup mix, add in the soy sauce, garlic power and the remainder of the vinegar. Stir with a spatula or wooden spoon until mixed well. Mix together the cooked soybeans and rise, then add the stroganoff sauce. Reheat if needed and serve.

Lasagna

1 package vegan-certified lasagna noodles
1 onion, chopped
1/4 olive oil
5 cups tomato sauce
2 teaspoons each, chili power and oregano
1 teaspoon each basil, salt and paprika
1/2 teaspoon allspice
1/4 teaspoon pepper
2 tablespoons brown sugar
3 cloves garlic, crushed.
1 package crumbled tofu or
2 cups cooked vegetables.
Nutritional Yeast (optional)

Prepare the noodles according to package instructions. When done, rinse in cool water to prevent sticking.

In a Dutch oven, sauté the onions in the oil until tender. Add the remaining ingredients and simmer for thirty minutes.

In a greased baking dish, start with a thin layer of tomato sauce, and then add a layer of noodles. Spread out a layer of crumbled tofu or cooked vegetables. Ladle tomato sauce on top. Sprinkle the sauce nutritional yeast if desired. Repeat layers, starting with the noodles and ending with sauce.

Bake for 35 - 45 minutes in a 350 degree oven.

Macaroni and Fake Cheese Casserole

3 1/2 cups vegan-certified whole wheat macaroni, cooked
1/2 cup flour
1/2 cup margarine
2 tablespoons soy sauce
1 1/2 teaspoons each salt and garlic powder
Pinch of turmeric
1/2 cup olive oil
1 cup nutritional yeast

In a saucepan, melt the margarine and add the flour. Stir until smooth. Add salt, garlic power, soy sauce and turmeric, stirring well until all is incorporated into the roux. Cook until thickened then stir in the oil and the nutritional yeast.

I like Vegetable Fried Rice the best but
Here is a really simple good recipe that I enjoy.

Veggie-Casserole Recipe

1 can red kidney beans, drained (15 oz)
1 can garbanzo beans, drained (15 oz)
2 cans tomatoes
1 green pepper, chopped
1 large onion, diced
garlic cloves to taste
2-3 cups of frozen vegetable mixture

1 box of couscous
1 cup grated ff cheese(Optional)

Combine all ingredients except couscous and cheese in large casserole dish, and bake in 400F oven for 45 minutes.

Can add 1/2 - 1 cup grated ff cheese the last ten minutes of cooking.(Optional)

Serve over couscous.

Corrigans Minestrone ( this one comes from allrecipes.com)

INGREDIENTS
2 tablespoons olive oil
5 potatoes, peeled and cubed
5 carrots, chopped
4 stalks celery, chopped
1 sweet onion, chopped
3 cloves garlic, chopped
1 (6 ounce) can tomato paste
1 (15 ounce) can kidney beans, drained and rinsed
1 (14 ounce) can vegetable broth
1 1/2 quarts water
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh oregano
1 tablespoon salt
2 cups uncooked elbow macaroni
DIRECTIONS
Heat olive oil in a large pot over medium heat. Stir potatoes, carrots, celery, onion and garlic into pot. Mix in tomato paste, beans, broth and water. Season with basil, oregano and salt. Cook and stir 30 minutes, or until vegetables are tender.
Mix macaroni into pot. Continue cooking 10 minutes, or until macaroni is tender.

i'm no longer a vegan, yet vegan chocolate chip cookies are insanely undemanding to make. purely seem at any old recipe for chocolate chip cookies, non-vegan ones. some minor substitutions will make an excellent, undemanding version. a million. Use semisweet, non-dairy chocolate chips. (maximum grocery shops have them.) 2. Use vegan non-dairy margarine. (i'm specific, as a vegan of even a pair of weeks, you may come across this, yet maximum medium or greater desirable shops could have it.) 3. extremely of two eggs, use a million/4 cup of all organic, unsweetened applesauce. (Any food market could desire to have this.) 4. Minor replace to the baking soda content cloth, meaning upping it to in keeping with probability a million and a million/4 tsp, to make up for the pureed fruit content cloth.

Oh, my favourite is the garlic spread. If you like garlic bread, you should try this:
>Cut off the top bit of a nice garlic bulb to just expose the garlic
>spinkle a pinch of salt onto the garlic
>then pour a bit of olive oil onto the garlic
>Wrap the bottom of the bulb with tin foil
>Put the bulb in the oven until the garlic soften
>The garlilc spread goes well with a nice piece of french toast
