1) Freeze the tofu for as long as possible before using it (if you freeze it in the white package you buy it in, you can defrost it by putting it in a saucepan and covering with boiling water). Then squeeze all the excess water out.

There's a good one for hot and sour soup at epicurious.com. It calls for chicken broth, but my friend used veggie broth and said it turned out great!
