The recipe calls for 3 eggs, 1 1/4 cups of water, and 1/2 cup oil, plus the cake mix. I know I can sub applesauce for the eggs, but how much should I use?

Usually you substitute applesauce for the vegetable oil in the recipe, not the eggs. You could grind 3 tablespoons of flax seeds in the blender with 3/4 cup of water to make egg substitute (blend until jelly like, don't use in white cake, it has flecks). Each large egg has about 1/4 cup of liquid, if you can run 3/4 of tofu in the blender with the water needed for the recipe, that would turn out ok... Sorry, I don't know what you have on hand to use. Vegans use a product called egg replacer that is made from potato starch and tapioca flour.

Applesauce is usually used as a lower fat substitute for the oil. The eggs are necessary to help hold the form of the cake together, you would have a very crumbly cake without the eggs in it.

You could just leave out the eggs. I am allergic to eggs and when I was young my mom just left them out or she used an egg replacment. It looked kind of like a powder, you can buy it the store... I think.

I just want to thank you for asking this because I was just about to.! Now we all know.
And as for the comments about just using eggs, I would, but my sister is a vegetarian, so I'd like to be able to make her a birthday cake that she WILL eat! thank you so much.

like both, fruits: berries, oatmeal, pears, peaches, dragonfruit, pomegranate.... Vegetables: CUCUMBERS, bok choy, green beans, broccoli,.... My spouse and i guess the two are great.
