I am having a party this weekend and the theme is Mexican food and drinks (coronas, margaritas...). I'm looking for some fun ideas for the drinks, appitizers, food, dessert, anything! I need to be able to make the recipes serve about 20 people. My husband promised everyone the party with this theme before talking to me! Besides tacos and salsa, I'm stumped! HELP

I used to have Mexican themed parties and would have a burrito, taco and tostada bar. There would be the taco shells and flat shells for tostadas, you can put out corn and small flour tortillas( and also large flour tortillas for burritos), taco meat, refried beans (heated in crock pots) shredded lettuce, shredded cheese, diced tomatoes, sliced olives, jalapenos, salsa, sour cream, guacamole, etc... and have them put together their own concoctions. People love to put it together themselves...it's fun! Have a great party and good luck!

Stack of tortillas, forget taco shells. You can do burritos with them too.
Look up the marinade for carne asada. It's basicially a marinated (with paprika and other spices) minute steak topped with salsa and guacamole.
Albondigas is meatball soup...tortilla soup's good too.
Get a bunch of shredded beef, chicken and pork, Costco should have a lot of what you want.
Frozen rolled tacos (Costco), just need guacamole and sour cream.
Shrimp cocktail mexican style is different than what you would normally get at the restaurant, it's mixed in .
Introduce the fish taco. It's just fried fish, lettuce, salsa, and white sauce.
Beers: Corona, Pacifico, Dos Equis, Sol.
Tequila. The stuff with the worm is mezcal. White tequila for margaritas. Blue agave is good "sipping" tequila. Cabo Wabo, Tres Generaciones, Patron and Corazon are top shelf tequilas.
Sangria. Must have sangria.
Michelada: it's sticking ice in the blender with beer and a lime. Been done for years. Miller is putting out cr-ppy version of it.
Enchiladas with mole sauce.
Mexican rice, made with chicken soup.
Non alcoholic drinks - jamacha, horchata (rice milk).
Dessert - rice pudding . Also called arroz con leche.
Flan.
Tres leches cake. If there's a Mexican bakery. It's awesome.
Churros. Those cinnamon deep fried sticks.
Local library and Food Channel should have more info.

Stuffed fresh jalapenos, wrapped in bacon.
Pick out some fresh jalapenos in the produce section. Make sure they are firm, bright green, and don't have any "lines" on them. Before slicing them, you might want to get a pair of rubber gloves. Slice them length wise and take out the membrane and seeds. Rinse and put them in a sauce pan covered with water and slow boil them for a few minutes to help soften them. Cool them in cold water.
Mix a filling of cream cheese with lemon pepper, a few dashes of garlic powder and salt. Add cilantro (dried or fresh) or chives if you have them.
Fill each half of pepper with cheese mixture.
Get the cheapest bacon you can find, the thinner the better. Wrap each half with a strip of bacon, wrapping it tightly. Dash on a sprinkle of season salt when done wrapping them.
Cook them on the grill, pit, or in the oven till the bacon is nice and brown. Peppers will shrink a bit when they are done.
They are great hot off the grill or even after they have cooled. Careful though, the cheese inside is hot.
May not be exactly Mexican, but here in Texas, it's close enough.

Guacamole w/chips - easy to make. Three layer dip (look up at foodnetwork.com) taco bar (all the stuff, make them yourself).
When the party gets going - tequila poppers - in a large shot glass a shot of tookillya, dash of kaluha, and some ginger ale. Cover the glass w/towel and slam it on cutting board. Drink immediately.
