Vietnamese. It's a nice marriage of Asian and French flavours and techniques.

Thai, and that isn't because I'm from there.
Thai cuisine offers all the taste you can find, and implements the local spices nicely. It can be healthy, yet flavourful. When you eat Thai foods, you cannot mistake it as others. That's a power of Thai flavors.
For those you say they don't like Thai foods, I believe, it's because they haven't tried a dish from a proper place, just yet.

Japanese seems to be the healthiest and cleanest.
Vietnamese seems to be second, although they use a lot of fat from the beef (they leave it on), the use the whole head for their broths.
Since finding out that the number 1, fertilizer used ion China is Human POOP, I refuse to even eat the stuff now. I have checked all my vitamins to make sure they are not made in China, not just distributed here in US. All herbs like Ginseng, I will not touch anymore unless approved by FDA. No wonder all these so called great herbs are not FDA approved.

Chinese cuisine is my favorite, as it has the widest range of cooking styles using almost all types of meats, vegetables and condiments.
Japanese cuisine is uniquely exquisite. Many dishes are very healthy, being cooked without much grease.
Thai and Filipino cuisine comes next, with the varied and extremely tasty foods, which are easily prepared with fresh and easy-to-find ingredients.

Japanese is my favorite. Then Thai and Chinese. Followed by Philippino, Vietnamese, and Korean. Then Indian. Did I leave any out? LOL

I'm partial to Korean Kimchi and rice. Terribly cheap in Korea and underrated, but even the Japanese like it so much they pay a premium for it in Japan, and Japanese make Good food. . But I also Like Thai, and Chinese. Filipino and Indonesian are good but kind of greasy
