I have quite a few faves:
~Spinach lasagna (homemade, of course!) with a tossed salad and a good wine. Yum!
~ Vegan stuffed green peppers
~Black bean burritos with Mexican rice
~Vegan BLT with strawberry lemondae - the perfect Saturday afternoon summer lunch!! :-)

This meal I get at Mustard Seed Market (a northeastern Ohio cafe and grocery store) .... it's stir fry with fresh vegetables, bamboo shoots, and water chestnuts over brown rice with teriyaki sauce ... with tofu and cashews ... MMM!! I can never finish all of it, but it's better than anything I can cook. The red peppers are amazing and the tofu has a great texture to it.

It is possible to make a great spaghetti sauce without meat , I guess even Vegan, but usually I include parmesan cheese on top.( Lacto Vegetarian)Mushrooms aplenty and tomatoes and basil and onions and garlic eggplants too. I've gotten quite the expert at it. So, I guess that includes any Italian food related to it.

i easily savour vegetarian burritos, rather from this one place referred to as Bajios. i'm easily no longer a vegetarian, yet i do no longer would desire to have meat at each meal and that i savour countless non meat stuff. however the burrito is beans, rice, grilled and caramelized onions/peppers and guacamole, salsa, bitter cream and cheese, that is sooo yummy!

I have several.
1. An 'old-fashioned' dinner with mashed potatoes, a heaping pile of steamed broccoli; some vegetarian bacon (which I put some mashed potato in and roll it like a cigar), or veggie chicken legs; and home-made vegetarian gravy (not miso gravy, which I like, but real gravy) smothering it all.
2. My two 'pan-mediterranean' salads - one with tomatoes, bocconcini, onion, green olives, stale bread, Portuguese olive oil, red wine vinegar, and salt and lemon pepper; and the other with chick peas, tomatoes, onion, cucumber, dry bread, and a homemade dressing made with mayo (or tofu mayo), apple cider vinegar, blue cheese, red relish, salt and lemon pepper.
3. Build your own tacos, with tacos, grated cheese, refried beans, browned veggie ground beef (seasoned with cumin and coriander, garlic and onion powder), veggies (tomato, green onion, shredded lettuce), salsa, home-made guacamole, and sour cream.
4. My own faux stroganoff, with four layers: a bed of brown rice; a stew of veggie ground beef, garlic, onion, mushrooms and sour cream (seasoned with soy sauce); a big pile of steamed broccoli and cauliflower florets (about 6 cups); and topped with GRAVY!!
5. Asparagus and three mushroom risotto.

There are quite a few. For Chinese dishes I love Kung Pao Tofu, Tomato & Pepper 'Steak' (seitan), Lettuce wraps filled with noodles, chives, mushrooms, scallions, etc. Buddha's Feast: Black mushrooms, fried bean curd, cellophane noodles, bean sprouts, baby corn and cashews.
For Thai it's Panaeng Curry with seitan or Mussaman Curry with potatoes, coconut milk, peppers & peanuts, and crispy Mee Grob (rice noodles).
Mexican: A taco salad -- crisp tortilla bowl, filled with beans, brown rice, pickled veggies, diced veggies, olives and guacamole. Enchiladas: corn tortillas stuffed with veggies and vegan cheese or miso-pickled tofu, topped with homemade enchilada gravy, & garnished with shredded lettuce or cabbage, scallions, olives, etc.
Seitan Stroganoff with mushrooms, rich wine sauce, vegan sour creme over wide noodles.
A sandwich made with tofu "egg" salad, or chickpea salad.
Need to stop writing now -- must fix dinner ;).

Fried eggs, chips and beans, delicious!!!
i also love steamed asparagus with hollandaise sauce, and I like any vegetables lightly cooked and covered with a good cheese sauce.
